Looks delicious but this technique will eventually give you nausea after consuming 4 or 5 chopped fats. I usually heat the fats until most of the oil comes out, remove excessive oil. With the remaining oil if cook(without adding vegetable oil) like your technique till the meat is overcook slightly I think one can consume a kilogram of pork easily...

The best method is fry the pork and onions together with no oil because pork fat becomes oil and that's enough for the preparation.
