I just watched my fourth Clive Coffee video in a row. They have all been consistently clear and to the point and I especially liked the emphasis on the end product - it really is all about making a cup of coffee that you enjoy without getting hung up on gadgetry and/or technique. I like the comparison, but as an analytical scientist, your use of stats was misleading. What are the units of measure? How did you quantitate ‘channeling’? Your trend line is wrong- that is not an R2 value, but perhaps a P value. Like they say, there are lies, damn lies, and statistics.

I was wondering the same thing. Since the glass was on a scale I am wondering if that variation is in the mass of the pour. I would love to know for sure otherwise that data isn't particularly helpful.

I was using a VST basket for many years, recently re-sold it. I get better results usually from the stock basket, I think it does depend on your grinder, coffee prep and coffee roast level and preferences as well. I think VST did offer a little more clarity (maybe less body) but I found it channeled more often than my Stock ECM machine's basket. It requires a little finer grind size and very careful puck prep. I think it is a bit better for light roasts if you get everything right.

Two years passed. Any idea how puck paper performs instead of specific basket brands? I always love the physics behind, rather than specific brands.

perhaps you don't have a good enough grinder for these precision baskets to perform, hence you see better results with stock baskets that usually are flow restricted to accommodate for cheaper / less consistent grinders.

I have just been through a spate of upgrades on my Oscar 2, replaced my grinder with a Mignon Silenzio and whilst the results were superb, the consistency wasn't optimal. Just received an 18g VST basket and the results have been game changing! Far quicker to dial in shots due to less variance between them and consistently brilliant shots. If you are on the fence, do it!

Couldn't agree more. A VST basket always improves the clarity and consistency. I find them a bit easier to get dialed in too!

I have a VBM Super Domo and I use a Rocket naked portafiller with the original basket, I have ordered a VST 20g basket to see how it goes, always looking for improvement. A recent service and replacement of the vibrating pump has made an improvement in pulling a lot more consistent shots, the pressure gauge is now very stable. The article mentions discarding the first few grams of the grind, sounds like a good idea, will try that tomorrow. I am lucky I am able to buy 500g of freshly roasted beans every 7 to 10 days.

I liked it but I’m just a small homebrewer guy and when I do use my espresso machine it’s with the OEM! Since it takes a far less space using my nanopresso from Wacaco and I like to use my own ground coffee I realize this is not going to come up the most people standards as being espresso, but I say if you like it drink it! Your information was very interesting we’re probably geared more towards café owners and those who have high-end machines in their house!

I have VST 15, VST 22, Pullman 876 17-19, IMS 16-18, Pesado 20. All of them produce different results but my favorite is the pullman and vst 15g. 22g vst tastes terrible btw the pour look perfect but i always prefer the lower dose espresso shot even in a big latte i used around 14-19g now

@@clivecoffee in my experience lower dose shot taste a lot sweeter, it happens when i try a new coffee and had a problem getting a decent shot with 20g dose then i lower my dose to 18g and the difference is mind blowing. The 15g vst require a perfect puck prep btw it's really easy to get a bad looking shot when you messed up the pcuk prep but once you nailed it it's amazing.

@@zakifariz So even if you respect the ratios, the more grams of grounds there is, it will be less sweet and more "hard/bitter/bad" you say? I currently have a OEM 18g and was thinking of getting a single 10g + double IMS 20g so it is easier to calculate, then maybe a Triple 22g.

I’ve replaced stock ecm basket with the vst 18 and can no longer get a nice pour. Every shot has channels now with vst so this is opposite to the advice in your video. I’m using Niche Zero grinder. If I go too fine i get spurts and slow flow but nice colour. Everything else is too blond or too fast. I just can’t get it right in the middle. Using ocd and correct size tamper. What can I do?

You don't mention your machine. Also the adjustment of the grind might be too drastic as might be your tamping method and pressure. I use a distributor plus a calibrated tamper and am getting amazing results. I have an oscar 2 and had to fit the 9bar OPV as 15 was too high and caused problems.

I just bought a Rocket Appartamento and im struggling to get it working. It makes the coffee way too fast, 18 grams in and 36 grams out in 3.4-3.8 seconds. I weigh my coffee and im putting in the right amount. I use expensive pre ground stuff called Nescafe Blend 43. It looks to be ground quite coarse but when I empty out the jar and check the granules they all look to be a very consistent size. A friend told me to use better coffee so i have tried this brand called Macona, slightly better but I am having the same issues, less than 4.5 second brew times. I was told i need to tamp with more force so I have began to use my foot to squash the tamp down really hard. This has gotten my brew times to 11 seconds but I have damaged the portafilter channels from standing on it. Im thinking the problem might be the basket?

Chances are, the pre-ground coffee is far too coarse for use in your Rocket Appartamento (or any other machine with a non-pressurized portafilter), regardless how consistent it is ground. Invest in a good expresso coffee grinder, buy good whole beans and then dial in the grind to produce a pull between 25 and 30 seconds (the magic number will vary depending on the roast, etc.)

From my understanding, ism baskets are the same as vst baskets. They are made in the same factory. But with ISM they are not checked by magnification and come with no certificate. Instead ism pays to have ism printed on vst baskets. So how do pullman baskets compare against other baskets?

Me too I wanted to know as I was prolly gonna replace my stock crappy basket from the (Rocket R58) with those from "BaristaPro Nanotech" and get a better shower too for more even water distribution, and even replace the stock rubber E61 seal for a silicon seal.

they are very nice, they also have a IMS competition basket, which the bottom is convex to allow flow to middle of the basket... i also have a VST and they too are nice. cant go wrong.

@@JohnSmith-bn7bl I hae the IMS 20 gram nano barista pro. Nice basket, but I MUST have a legit 20 grams from the Niche for best results. It can actually hold 22 grams with a 3 mm head space...but that much coffee would get me woozy!

@@user-qw8fe6wp7k VST were more expensive where I live too, but I guess it depends where you live. If you live in the States, I suppose the VST baskets are cheaper. Anyway, I read some reviews and decided that IMS is for me.

I was thinking ... If the default size for many people is a double or 18gm at least , why isn't there a double spout pf that can hold a 36gram basket , so you can split the shot into 2 doubles

The reason many people think 53mm are inferior to 58 is that they're super deep. A 36g basket would either have to be ridiculously deep or insanely wide (something around 80cm). This is completely unfeasable and would produce terrible shots. A machine that has a strong enough pump to handle that kind of dose would easily be able to pull back to back shots anyway, which would be much more logical.

After about 3 months of using Profitec's own basket, I ordered some from Decent Espresso (which I believe are made by either VST or IMS). I prefer their shape and perfectly flat bottom with straight sides. The issue I have with that consistent shape is that it's near impossible to use lower grams for single shots. Because Profitec does not have flow profiling, the pressure just pushes water through all the same, making it run really quick through it. I lead me to understand why Dalla Corte uses 53mm :)

Richard Lafleur if you have equal pressure, grind and horizontal area and only difference is grams, then it’s obvious it won’t work. It’s not feasible for me to adjust grind size for each shot, my grinder does not allow that (need to empty the hopper). So either two grinders or different grinder or machine with flow profiling.

Hi, I have a bottomless portafilter and I just purchased a VST 18g filter for it. Using the bottomless Portafilter and VST for the first time. I pretty much had everything dialed in, but when I used the VST filter the rate of flow almost double. I got my 36g of liquid coffee in about 12 seconds. Wow! I did not change any of the grind settings. Is that expected when changing to a VST filter? Do I now have to adjust my grind settings to accommodate the VST filter? I confirmed the change in flow rate by replacing the previous Rocket filter and all was as I expected…..36 grams in about 28 seconds.

yep bottomless needs a really good grinder, i had to upgrade because my cheap one couldn't go fine enough (delonghi dedica grinder)

What is the difference between a pressurirized portafilter, which is regarded as worse, and a normal one? The way I understand it, the pressure is all above the coffee layer and not in the basket.

I'm no expert, but this is my understanding and experience... by extracting coffee under pressure, the extraction goes faster and grabs more of the interesting components in the coffee. It also releases the CO2 trapped by the roasting process, which is what produces the crema (crema is essentially very fine foamed coffee). For a standard espresso machine, the pressure is formed by forcing water through a correctly ground and compressed puck of coffee. For this to work, the grind has to be just right. Most affordable home grinders cannot produce the correct grind - either in size or consistency - and the pressure built-up is too low. To compensate, some manufacturers make pressurized portafilters. They limit the flow of water to produce the correct pressure a different way. The result is even with a poor grind, you get some crema and a reasonably good cup of espresso. But it is inferior in that you simply get better flavor and consistency from a proper grind and having a pressurized filter disguises the results so you're better off without, providing you have good equipment to start with.

If you don't have a good grinder or old/cheap coffee (or both) all the puck prep won't help, that's why entry level machines come with pressurized filters, the second chamber in the filter brings up the resistance you should have in your coffee puck, and it always produces a crema. So it looks nice but tastes way worse. Pressurized can be used with anything but taste gonna suffer Non pressurized need finer grinded coffee and solid puck prep, but you are rewarded a great tasting Espresso, and maybe a glimpse about what makes this hobby so addictive

@clivecoffee I’m getting fine particles of coffee in my espresso shot. The shot is pulling well and within the 25-30 sec with a 1:2 ratio. I was advised to change my basket. I just purchased a VST 20g ridged and still having issues. Any thoughts? Thanks in advanced.

Tamping and distribution also play a huge role. I use a distributor and a calibrated tamper and get consistent shots. some grounds are supposed to get through. dialing back on the particle size (Not sure what grinder you use but this is very very significant) might help.

Uhhhhhh, the reason that coffee is the color that it is, is because of there being dissolved solids suspended in water. So yes, lol, you should have coffee partials in your coffee. Otherwise it would be water. 😂😆😅 And you never said what the problem is or that you are facing, after now switching over to a vst basket. So.........?...........

Its a bit unclear what you mean by variability from target yield. Is that measured as weight of beverage in the cup at 25 seconds of extraction? Or are you measuring extraction quantity with a density meter and displaying variance from target with that graph?

During this experiment, Charles stopped every shot at 25 seconds, aiming for 30g out - The chart displays by how many grams the shot is off.

What are your thoughts about pressure basket with ridges (spring wire that keeps them firmly in portafilter )versus those without ridges?

The ridgeless baskets can accept larger tamper diameters, like the 58.55 Pullman Big step. The ridged helps the basket stay in the portafilter much more snuggly.

It's surprising how companies dare to give us absolutely trashy 5$ garbage baskets even on 3600-9000$ machines, like seriously?! I'm gonna order tomorrow the new (IMS Nanotech Precision) baskets and shower with an improved E61 ring in silicon.

Hey! Typically a lower dose will require a finer grind to stay around the optimal 25 second shot time. Just make sure you've got an even distribution and you should see success!

Personally, I like the ridged because gives me a guide on the evenness of my tamp. There should be no difference in the quality of the shot of espresso due to the ridged or ridgedless part of the basket. What makes the VST so great is the precision in the size and shape of the holes in the basket vs a non-VST basket. -Sam

i recently bought a 15g VST basket but i never got one good result with it. i filled 15g, it was way too underextracted, so i adjusted my grinder to produce finer grind. Now i have 15g in / 27-28g out in approx 25s but the shot taste really bad. I have channeling issues... Any thoughts on this ? (Setup: Baratza Sette 270 + Lelit PL62X)

the time/ratio is a guide. Too sour means not well extracted enough (Adjust finer) and too bitter means too extracted (Make coarser). Micro adjustments now are key to get the taste right. Once you have a more balanced output, maybe try a longer extraction by a few seconds and see or dial it back a few to get a better idea.

@@TrentBurrows thanks i know all this. But the problem was the channeling, i resolved it by increasing the dose to 16g / 16,5g and grinding into the sette grounds bin, then transfer it into the PF. Grinding directly into the PF produce a dome with more coffee at the center. Even with a propoer distribution, there will always be a higher density in the center. I also changed the grinder with a Eureka Specialita' but it didn't change anything :D (exept the noize level)

@@SylvainProov I have a Eureka Mignon that is a recent addition and it definitely improved things. The VST with my current beans though is wonderful. I have just ordered a range of sizes as my last beans were best at 16g. So many bloody variables! ;)

@@SylvainProov Yeah I’ll shortly have the complete collection. They are insanely good! Puck prep for me now is a military precision operation. What I have noticed with VST baskets is that an 18g basket means 18g at a minimum and there is little room for variation. I tend to try stick with the basket size and vary the grind and extraction time. Overfilling can also be very problematic.

For precision baskets (VST, IMS) get the basket for the amount of coffee you want to use within 1 gram. They aren’t meant to be overfilled like stock baskets.

I just want to comment here om your use of stats. Your use of R^2 is incorrect, since you presume there to be a trend in your data while that hypothesis is completely unsupported by 10 data point. If there actually was any trend, so would be talking about Heteroscedasticity. You want to show one brew method has more variance than the other, for that you need to use the standard deviation. Where you divide the one by other as a means of showing method one has an x percent higher variance than the other. Now to show that this is a statistically significant difference you would use an f-test. And in terms of metrics you would show your audience the confidence interval or p-value of the null hypothesis of the test(which is there is no difference). Saying there is a y-percent chance these two brewing methods do not have the same variance. If you do that, you also want to show the audience the power of the test, which is very much influenced by your sample size which is only 10. So probably you want to collect more samples as the test is not going to be very powerful (usually somewhere in the neighborhood of 30 samples per brew method would start to give enough samples to use statistical assumptions). I am a quant, a data scientist with a masters in econometrics and chemistry. I build machine learning and data science apps for pharma and life science companies. So from that background I look at your methods and thought maybe I can help you improve .

@@JasonAlexzander1q47 I strongly disagree. Grinder should be your first piece, but you don't have to pay over 1k for just a grinder to enjoy a decent espresso imo and from experience. I'll bet @HugoCool has something in mind. ...even James Hoffman has recs.

do you think you can use a 20g basket for 18g coffee? or is it better to take an 18g basket? the fact is that the original basket of gaggia classic at 18gr of coffee is not deep enough, because of this, prints from the mesh and bolt remain on the coffee tablet after preparation. I choose a basket between 18 and 20g

Hey there! Yes, you can still use a 20g basket with 18g of coffee. With a smaller dose in a larger basket, it's super important to make sure the distribution is nice and level to ensure the most even extraction. A thinner puck is more likely to crack and cause channeling. Hope this helps! -Amanda

The only issue is increasing the headspace between the puck and the shower screen usually means there will be too much space for the 3-way solenoid to work effectively so you might get a soupy pick, depending on the machine.

It should. it's not excessively deep. 58mm should fit most 58mm machines.

@@clivecoffee I just like the machine (a Lelit Anna). It doesn’t need a lot of internal tinkering like some others in its price range. But for some strange reason the manufacturers decided to go with a non-standard 57mm portafilter. After I buy it, the first thing is probably to find a precision basket

I tend to not follow you here. Microscopic analysis from other sides do NOT second your (somewhat common) allegation about the holes of VST baskets being more precisely then today's typical OEM or noname basket. The reason might be simple: Most (if not all) of today's OEM or noname baskets are coming from the same 2 factories (IMS in Italy and a Chinese factory which is also producing the VST and La Marzocco labeled ones). Baskets produced by IMS can be easily recognized by their characteristic hole shape and tooling marks. Hint: A lot (but not all!) of their unbranded baskets can be found in their standard catalogue (not E&B or Competition). From what I have seen in my life so far, the Chinese ones also have a characteristic inside grating/polishing which indicate their origin. I see the differences between OEM/noname and labeled baskets about extra polishing and in some cases a specific shape. There is absolutely no evidence or industrial plausibility for the assumption that the holes are punched differently - again: Microscopic analyses show the opposite
