Gingerbread
Ingredients:
sugar - 100 gr
honey - 165 gr
ground ginger - 1.5 tsp.
ground allspice - 1 tsp.
ground cinnamon - 1 tsp.
ground cloves - 1 tsp.
soda - 2 tsp.
butter - 125 gr.
egg - 1 pc.
wheat flour - by eye
for glaze:
whites - 1 pc.
powdered sugar - 200 gr.
starch - 0.5 tsp.
lemon juice - 0.5 tsp.
put sugar, honey and all the spices in a saucepan. bring to a boil, remove from heat. add soda, stir. the mixture should foam strongly. add the butter, then when it cools down add the egg and flour, knead the plastic dough. Divide the dough in half, wrap one part in film and set aside. Roll out the rest of the dough into a layer 0.5 cm thick and cut out cookies with cookie cutters. If you are going to hang cookies on the Christmas tree, before baking, make a hole in each cookie for the ribbon. place on a baking sheet and bake in an oven preheated to 170 degrees for 10-12 minutes. repeat with the remaining dough.
glaze:
beat the whites into a foam and gradually add powdered sugar, starch, and add lemon juice (for shine). You should get a homogeneous viscous mass. put it in a pastry bag, cut off a corner and decorate the cooled cookies as your imagination allows. let the cookies dry and... eat or decorate the Christmas tree.
