This is my macaroni salad!!! I keep a bowl of some sort of salad in the fridge all summer long so that if any of my family wants a nutritious snack, instead of chips, etc. they just grab a small dish of salad...macaroni, potato, cucumber, or any other that will last well in the fridge for a couple of days. Been doing that for 4 decades.
@Ena48145
@Ena48145 Жыл бұрын
Sorry but calling this nutritious made me laugh.. pasta is the worst carb you can eat as is coating it with mayo. WITH THAT SAID, I made macaroni salad tonight and I'm adding extra ingredients mentioned in the video because I am craving a deli style one lol. I'm about to chow down on a big bowl of it! My mom always did the same as you for us kids!! Macaroni salad, potato salad, cucumber salad in the fridge pretty much all summer long. Her potato and macaroni salad is just mayo, salt, pepper, celery, onion and that will always be my favorite and best way for me (except when I feel spicy and want something different like tonight lol) and then her cucumber salad is thinly sliced cucumber and onion, mayo, vinegar, salt, pepper, I think a little bit of sugar? She also always made something called "dippy" (she and her Italian family would dip bread into it) which is just onion, fresh tomato, olive oil, salt, pepper. She hasn't made pasta salad in years but I always loved that too!.. olives, onion, chunks of salami and mozz, etc. Might have to make that tomorrow! You sound like a great mom and I'm glad you take care of your family the way you do and make sure they are provided for :)
@lauragriffin6512

@@Ena48145 Our salads are identical, including the cucumber. We must be related. Only difference with my potato and macaroni is that I add a LOT of celery, onion, red and orange sweet peppers, shredded carrots (must be shredded, not chopped), so that half the salad is nice crunchy vegetables....nutritious. 😊 !! Plus chopped hard boiled eggs in the potato.

Years ago, I had a friend with a gorgeous, classic 1956 Bentley. He always had a jar of Grey Poupon in the glove box because, invariably, somebody at a stoplight would say, "Pardon me, would you happen to have any Grey Poupon?" "Certainly," he'd reply with a blinding smile fairly radiating noblesse oblige. It never got old.

Grey Poupon!! About 20 years ago my friend rented a limo for a day trip. When we climbed in the back there was a jar of Grey Poupon velcroed to the wall next to the window. As we're going down the highway people were ogling the limo, so my friend rolled down the window, grabbed the jar and totally mimed that commercial. I thought it was hilarious and the people in the other car did too. A great memory. 😁

Hi John! Love all your videos! Yes, I do remember the Grey Poupon commercials! I have a great tip for easy peel hard boiled eggs. Saw it somewhere... Steam the eggs on a vegetable steamer over boiling water for 15 minutes, cool down in ice water after steaming. Even if they are fresh, so easily peeled! Just pop the cooked on the round bottom to start the cracking and Voila!! Easy peasy!

Some time ago I stopped boiling my hard boiled eggs and started steaming them. I put a steamer basket in a pot, add come water, and when it is heavily steaming I add the eggs, cover them, and let them steam for 12 minutes for creamier centers, or 15 minutes for drier centers best for potato salad and macaroni salad. The high heat of the steam caused the membrane inside to separate quickly from the shell. I have never had eggs peel this easily and I frankly will never go back.

This recipe is the closest I have ever had to my mother's. She was a simple country lady and had perfected a way of cooking things that eliminated the unnecessary and concentrated on the things that made a recipe sooo good. The only difference I think is that she didn't use peppers in her mac salad, and sometimes she would add small cubes of cheddar. Anyway, thanks for the recipe, It's very good.

Neat trick with the onions. My girlfriend is Chilean, they make a dish called ensalada Chilena, which is basically fresh tomatoes and onions with a vinaigrette. But the onions they soak for a few minutes in hot water, like hot out of the tap. That softens them and calms them down a bit. I'll stash that vinegar trick up my sleeve.

For my hard boiled eggs…. I boil them for 15 minutes. Then drain all of the hot water out, put in cold water and plenty of ice. Let them soak for 5 min in that ice bath, then I “tap and roll” them on the metal part of the sink. Tap each end to crack the shell and like magic, the shattered eggshell slips right off. I’ve also tried putting a small amount of baking soda in the water while it’s boiling. Just be warned, this can cause foaming which you have to scoop off. But the ice bath way works well, too.

Such a quick and delicious salad recipe!! I made this the other day but more like a healthy version, forget about all that mayo dressing, just add a bit of olive oil (I used the oil from the canned tuna, it adds more flavor) vinegar, salt, pepper and on top of the ingredients you used I added tuna, sweet corn & chickpea 😏 super healthy and delicious summer meal. There's no right or wrong for this, you can play with the ingredients, like you can skip the pasta or instead of tuna add shredded chicken or turkey so it's up to your imagination and taste buds!! 🤤

I add a quarter to a half teaspoon of anchovy paste to Mayo. Don’t need salt, and it is the mystery ingredient people like but can’t tell what it is. I’d add more but family claims they hate anchovies. I also use both sweet and dill pickles. I’ve used fruit too-sometimes grapes, sometimes pears or apples finely chopped.

@BertaBear RN I usually put the eggs in cool water, bring to boil, boil for @5-8 minutes. Then turn off the heat and let them sit @15-20 minutes, drain the water, give the eggs a really good shake to break the shells, cover with cold water and let them sit @10 minutes. Next is the "fun" part.... peeling them while still in the pan of water. They (usually) almost fall out of the shells, there are sometimes a few that want to stay attached to the egg.... but after a short "conversation" acquiesce to letting go without too much damage. As for the Instapot, I've never used one although they appear to work great. BertaBear RN, God Bless you and Keep you Safe in His Loving Embrace. Have an Awesome rest of the week and a Fantastic weekend and week ahead.

Place eggs (fresh, not fresh, doesn't matter) in a steamer basket over simmering water, cover and steam for 10 minutes and then take off the heat and let rest another 5 minutes. Plunge into ice water and then crack the egg on the wide bottom side (to break the membrane) and return to the water for a few seconds then peel. It is a miracle!

I just made this this morning ( Before the Heat of this heat wave in the PNW kicks in ) wanted a nice cold salad tonight and I knew I couldn't go wrong with one of your recipes...I just made this and I used the sweet pickles ( although I am not a huge fan of them, my husband is ) and I did not carrots and celery I used sweet onion and still did the vinegar with it and made the sauce the same, I added in Pepper Jack cheese and fried some spam ( I know prob sounds icky to you, but it is delish)...I added some granulated garlic to the sauce as well..This Salad is amazingly good! The dressing is Yummy, I would not change it up for the Dill pickles I love. It reminds me of a fresh Pasta yummy loaded up salad with enough dressing to keep this moist and delish and has that Potato salad reminder hidden in the dressing making this a winner. I can see making this for many events and a crowd pleaser...Home run!

I steam my eggs and whether they are new or old they peel beautifully. I also like to add shredded sharp cheddar cheese to my pasta salad. Yours looks beautiful!

John ! I made this for some company tonight ! They loved it ! Thanks a bunch. So yummy. I used horseradish mustard . Next time I’ll do the Dijon. Yum! I agree it needed more eggs . I did the recipe times 1.5 and used three eggs. Should have used 6 lol

I've always heard the secret ingredient in making tasty macaroni salad is not scrimp on the salt. My aunt said she usually salts it twice (while cooking) and be generous with the dressing.

Ok, this is the BEST Macaroni salad dressing I've ever made. Thanks, for the Idea. I think the pickles and pickle juice are the key. Now I also made fresh mayo and that definitely added a ton of flavor so if you can make some, but the pickle juice idea is great and it was the best macaroni salad I've ever tried even right after mixing not even having tried it after sitting. Love preppy kitchens recipes he's spot on! THANKS AGAIN!
