When you remove your jars from the canner make sure you place them on a towel or a cooling rack. Do not place them directly onto your countertop because the difference in temperature will cause them to break. Putting them on a cooling rack or on a towel will insulate them from the difference in temperature and they will cool safely without the glass breaking.

I noted that she said to remove the rings after the jars have sealed. I heard that it is recommended to do this in case they are contaminated the seal with break and if you have the rings cranked down it can create a pressure environment and break the jars..

Yes, you should remove the rings and wash the jars before storing them. Always store the jars with the rings off.

💕 Can I use a different weight on the presto? I only need 10 not 15. I’m new so thank you for any answers from experienced canners.

Hello, I am very new to pressure canning, I have a Presto 23 quart and have to use a portable induction hot plate, I have done the water bath test twice, both times I was unable to see steam, but, when the lid lock popped up, within seconds I could hear the steam coming from the vent, I have been told the lid lock should not come up at that time, it happened both times, can you please give me some guidance ( I was told, if the lid lock pops up before venting I have the hot plate too hot, and I could boil my canner dry, I tried it at a lower heat and nothing happened until 22 minutes in and I put the heat up, the lid lock popped up straight away)

How does the other canner work. I know that you put a 5 10 or 15 gage after it steams for 10 minutes but how can you tell if it reachs that to, if you have to adjust the temp.?

The bigger canner with the multi weight is the one I have. I would love to see how vigorously it should rock

Are olives food of low or higher acidity? Can they be processed in water bath or pressure canner?

6 or 7 quarts to a canner load and 9 to 10 pint jars.

Hi, thank you for your videos!. I just got a presto canner & was using the front burners which are really too hot to keep at pressure (I keep using a fan). I have a microwave above my stove. Do you know if I can place the canner on the back burners? I wasn't sure if it needed a particular height between the canner & microwave. Thanks

i have the old deluxe model which is wide and low. I wish to cook some bread and pudding. The manual lists molds and tin cans. Where pls i could find those items? Thiks.

you forgot that you have a hot jars go in a 180* water not cold water cause the jars can break

What about the round weight on the big canner? Constant jiggle or so many giggles per minute?

that small one is a presto, it has a regulator that rocks the closer it gets to 15 psi. The tall one is a Mirro and the jiggler has a 5 10 and 15 pound weight. The Mirro generally jiggles about 4 times a minuet

It depends on the brand and style of the canner. The old Presto canners are designed to have the petcock jiggle constantly, but gently. If you have what's known as a Mirromatic (the petcock looks like a really, really thick quarter and the edge of it rests over the steam vent), then that kind should only jiggle maybe once or twice a minute. And sometimes the Mirromatic doesn't even jiggle--it just sort of bobs a bit.

Great how-to! Does any steam or air escape from the jars during processing? Is that why the lids have to be finger tight only?

Air escapes from the jars. Is why you can smell what is being canned. So finger tight only is important.

The best way to explain it is water expands as it's heated..This is why you shouldn't put a pot on the stove that is cold and filled to the brim because it WILL overflow..Canning jars will do the same within the pressure canner through the cooking process. That is why a headspace is needed because the air is pushed out and then the lid is sucked down onto the rim in the cooling process.. providing none of the liquids or solids get caught between the seal and rim of the jar.. which usually is why some jars fail to seal and you see the canner water stained with product. I also recommend adding a 1/4 in of head space with small mouth jars because of the volume difference between lg. mouth jars and sm. mouth jars..Restricted space for air evacuation can cause overflows if you use too much heat

is the 20 minutes at proper tmeperature all thats needed to process? i heard the time has to be like 90 minutes and 60 minutes is that correct?

It depends on what your canning. The times can be found in the Blue Ball book and USDA preserving site on line.

meats are usually canned for longer periods. Check the blue ball book to be sure but, I can meat in pint jars for 75 minutes and quart jars for 90 minutes.

The above responses are correct. Usually meats and very dense foods take a long time. However, meat stock (chicken broth, for example--even with a few meat pieces in the bottom of the jar) only takes 20-25 minutes. If you can anything with potatoes, be prepared to process for 90 minutes or more.

I was surprised to see that the jars do not need to be covered with water. Is this the rule of pressure canning?

Yes it is, because it's not boiling water that sterilizes the product, it's pressurized steam (much hotter than boiling water). You just need enough water to be sure it doesn't go dry during the canning process. Usually 2 or 3 inches is plenty.

not everybody has a family and it would do people well if they dropped family in sentences such as what you're feeding you and your family. I care what I eat even though I do not have a family it's assuming that we all have a family and some of us are completely alone.

Den Ofiniquity well since you can't think why number one my mother is my only living relative that I have as my brother committed suicide in 2004. I have taken care of every man I have been with in a way that most modern women do not and that got me beaten and shot in the back and run over with a car and nobody deserves any of that no matter what they have done to someone else which I did nothing. I am disabled living on $900 per month in an isolated community where my neighbors are few and far between and on the kind of people to stop in and visit because I would be making cheesecake and cold brew coffee if somebody wanted to stop by. There was nothing in my reply that was angry ugly or rude. Though I know for a fact that I am not the only person without a family any longer. My father and his entire side of the family have died. My mother's side has one person left who I have not spoken to in 30 years due to abuse. I'm extremely easily abused because I am vulnerable from child molestation by my brother need I go on need I go on?? By the way I don't want you to feel anything about this or my life but don't post this shit that you did to someone when you don't know what their life is. I'm a very kind caring big-hearted and generous person.

The last member of my family passed away 11 months ago so I am completely alone disabled physically and medically and have nobody but my cat George.
