Hi Friend, in today's video I share 3 delicious recipes to preserve strawberries. Harvest season is slowly creeping in and its time to fill the pantry with yummy things to eat all year. We are making Strawberry Syrup, Sundae in a Jar and some Homemade Strawberry rollups.

2 ½ cups crushed strawberries
1 1/3 cups of crushed raspberries
6 cups sugar
1 pouch liquid pectin
1/3 cup chocolate liqueur

I keep frozen sliced strawberries (frozen in a single layers) in ziplock bags, to add to my water for extra flavor. It’s a nice treat after strawberry season is past. I just plop a frozen one in my water like an ice cube. You could also freeze them whole, but the slices put more flavor in your water as they thaw. My brother likes to drink the water to get the strawberry “prize” at the bottom of the glass.

If you have a Kitchen Aid mixer, I would recommend the ice cream maker bowl. I love that it goes with an appliance I already own! Only downside is that you have to plan ahead and make sure the bowl has been in the freezer. We used to just keep the bowl in the freezer all the time.

I love my kitchen aid ice cream maker. Sometimes I wish I had a 2nd one to make multiple flavors. I keep mine in freezer unless I’ve loaned it out. I love it and it I control what is in my ice cream. I’m able to make flavors you don’t find at the grocery store.

I wonder if they meant 6-1/2 cups of crushed berries? Lol, I used Pamonas Pectin for first time. I was use to one batch to one box of Surejell--well…I made Gummy Bears as Pamonas is for TWO batches. I guess I will have to recook and add juice or more fruit it as I use it to thin it out. I made freezer jam so it’s quite set.😂. It works very well for low sugar. I’m happy to see you follow the new SAFE canning instructions. I seen one recently that was done the old Italian way of canning sauce and they were wrapped in a blanket😮. No processing done. I will have to try fruit leather. Maybe I could roll out my double Pamonas Pectin jam😂😂😂

If you let your berry sit in the sugarr until is all dissolves it would of oulled mire juice drom your berries. I make wine n found I get more by slicing the berries covering with 1 cup of the sugar and leaving sit over night in the fridge gives me twice as much juice as if I cook down that add sugar.

That syrup looks SO beautiful! Some recipes (such as jellies) specify not to squeeze the fruit during straining as it makes it cloudy, but this one at some point refers to pressing, and the pulp being dry. So maybe this one you can press/squeeze while it’s in the nut milk bag get that extra juice out? 🤷🏻‍♀️

We are also heavy water drinkers but just recently gave the strawberry lemonade concentrate a try. We had some with dinner last night and we’re thrilled with the outcome. I’m not sure why this is the case but I have all the more common canning books and MANY cookbooks but I rarely try random recipes. That being said, I absolutely love it when you share a recipe from a canning book because it inspires me to give something new a try. Last summer I too was on the hunt for an ice cream maker. I didn’t end up purchasing one but it could still happen one day. Thank you for the video and always being your sweet self. Have a lovely weekend!

I really like to try unusual canning recipes, as long it sounds good :) Have you tried making shrubs? They keep for a year or so in the fridge and are a concentrate also.

@@cherylpresleigh6403 Yes, I have made raspberry shrub, and this past week after strawberry picking, made strawberry shrub. Very simple, quite a bit like refrigerator pickles. only more simple. Equal amounts fruit, plus sugar, plus vinegar. You can look up berry shrub recipes and how to use after it's made. Then you strain out the fruit with a cheesecloth, and put in a canning jar and store in the fridge. The vinegar taste/smell goes away and gets digested, and the fruit flavor gets enhanced. Use it as a mixer of sorts, whatever you enjoy, you could mix with it. Water. Club soda. It's very concentrated.

Rather than use the whole strawberry for syrups, you can cook down the tops. Cuts down on waste and stretches the food. I also use the cores of apples, peaches, pears, and pineapples.

I am looking into icecream makers myself atm. I had one but the paddle broke. That was one where you had to put the bowl in the freezer. Now I am looking into a self freezing icecream maker as finding space for the bowl was kinda a problem most of the time. The self freezing ones are more expensive but for me worth the extra cost as it saves me on finding freezer space all the time. The reason I had the other one first was because I wasn't sure if it would be used on a regular base. It was very cheap (£25-30 I think) but it served us well and I ended up using it quite often. It lasted well over 3 years.

When we had an abundance of berries we would use the blender and some sugar to make a sauce. Our method of preservation was freezing. Possibly this could be canned? Anyway, it was a great ice cream topping or to make strawberry homemade ice cream. Also nice topping for pound cake, angle food cake to make a quick, lighter dessert.

Hi Kelsey... We have strawberries overflowing in the freezer and their busting the seems of their beds out in the garden LOL 😂 Gotta get busy. I'm going to try the rollups. Can they be done in a dehydrator? My husband likes the berries warm right from the garden like you mentioned in your last video. Once again, thank you for sharing. Absolutely, the dehydrator is great! I’ve done that method as well, kept around 170-200 degrees for 4-6 hours ☺️ Thank you for the blessing sweet friend! Many blessings to you 🤍

Have you made sherbert? It's super easy! Throw some frozen strawberries, maple syrup or honey, and raw cream into the food processor and it's done and amazingly delicious! We also make sorbet - same way but no cream!

@@seedandsparrowhomestead If you get an ice cream maker, our favorite recipe is 2cups raw cream, 1 cup raw milk, 1/2cup maple syrup, 4 raw egg yolks, splash of vanilla, pinch of salt...Mix together and pour into the ice cream maker. It's delicious and has great nutrition!

Right about 6 hours. Depends on temp and thickness. I start checking every 30 minutes after it hits the 4 hour mark ☺️

Both recipes look delicious. Just curious, have you ever considered either flash freezing your strawberries or just slicing them, adding a little sugar and then feeding them? They are great for strawberry shortcake or on waffles/pancakes, or mixed with yogurt, 😊etc.

I was wondering what you did with the pulp from the syrup recipe too. Could that be used to make fruit leather, or do you suppose the flavor would be too weak?

The flavor was definitely lacking after all the juices were removed. We have chickens so that’s where they went, nothing ever goes to waste in my mind if giving to chickens, they give us more food in return. If you don’t have chickens I’d say you could freeze it and add to smoothies for added flavor and nutrition ☺️
