Some dishes have the taste of our childhood. Cooking is not only about nutrition, but also about culture. But some traditional recipes are being lost. We talk about one woman’s quest to preserve the food culture of her native Ghana in west Africa, and teach you related vocabulary along the way.
This week's question
Bangers and mash is a classic British dish. It’s easy to understand why mashed potato is called ‘mash’ - but how did sausages come to be known as ‘bangers’?
a) because ‘bang’ is an old-fashioned word for pork
b) because sausage-making machines used to make a banging noise
c) because sausages would explode in the frying pan, going ‘bang’

VOCABULARY 1. Bangers and mash : (informal) sausages (bangers) and mashed potato, a common British meal 2. Mortar and pestle : cooking equipment made up of a bowl (the mortar), and a heavy stone (the pestle) which is used to grind and pound ingredients together 3. Pound : crush into a paste or powder 4. Taken aback : feel shocked and surprised 5. Know-how : the practical skills and knowledge of how to do something 6. Document : record information about something by writing about it or taking photos of it 7. Plantain: a kind of banana that is cooked before it is eaten, or the plant on which it grows 8. Indigenous dishes : used to refer to, or relating to, the people who originally lived in a place, rather than people who moved there from somewhere else 9. Fact-finding: done in order to discover information for your company, government, etc 10. Plantain : a tropical fruit similar to a banana with green skin, or the plant that produces this fruit

Such an interesting topic i think. Sometimes we people feel upset or sad but let's look for real world. World is so interesting to discover. We have many planets, universe, many cultures and etc. Sometimes it's good to be realistic. There are many countries with big history, traditional food and their own languages. Learning all of it seems like another world. I remember one quote about learning languages. It said "If u know many languages you have a key to different world". I go along with that opinion. I hope everything will be good for you guys. If you read my comment i'll tell you thanks. I am really grateful for that. BBC, your programmes help people to improve the language which is really cool. This session about Ghana's recipes is interesting. I am from India and Indian food too has big variety , in different parts of the country we have different recipes. I too want to preserve traditional cooking of my family. Thanks to BBC team for bringing interesting programme to increase our knowledge and to improve our English as well..

Before 5000 thousands years the sumerians were able to document their recipes until today by write it down on cuneiform tablets, which makes us taken aback. Thus we know-how to cook indigenous recipes in present. Also my mother used to grind ingerdients by mortar and pestle, but that no longer happens after the development of technology and the spread of machines like blenders which take almost no efforts.
