Hi Pam, I just wanted to tell you how much you have influenced and motivated me to get back to all this type of preserving and bread making. I just recently found your channel and am thoroughly enjoying all your videos. I’m 71 (widowed last year after being married 50 years) and it’s never to late to take up this way of living. Even though it’s just me now, I really enjoy doing all these types of thing! Thanks for all you and Jim do, you two do make a difference! Oh, BTW the pasta in the minestrone is called ditalini or tubettini.

Hi Pam and Jim. I made this minestrone and we had it for dinner last night as I was too tired after work to cook. I added 1/2 cup dry pasta per person and 1 quart jar gave 3 serves. It was absolutely delicious so this is one recipe I'll be making over and over. Many thanks.

Love your videos. Just got a new canner but haven’t started canning yet. I’ve been watching your videos a lot. I saw you make beef stew and the vegetables were packed tight. I was just wondering why you can only put half a jar for the soup. Thank you.
@AndreaRuralMN
@AndreaRuralMN Жыл бұрын
Please test canning fully cooked poultry for safety. USDA does not approve because it hasn't been tested and they feel it might be too dense and yet at the same time say the protein is broken down (which means it gets less dense). They do not acknowledge the conductivity of packing in broth or water either. With holiday leftovers and holiday deals on turkey it would be great to let everyone know if it's safe to can cooked poultry. Thanks for all you do!

Hi, thanks for the video. I'm a new canner and am wondering about siphoning. Can you tell us more about that? Why it happens? Should I be concerned? When should I be concerned? How can I tell if the safety has been impacted? So far, I've been canning mostly meats, ground beef, cold pack chicken and pork, so wondering if this will impact safety and/or quality. Thanks, in advance!
