Thanks, Noah. I've made many standing rib roasts on my pit barrel in the eight or nine years I've had it. Spot on every time! The barrel is so forgiving, it makes a super meal every time. Trying different things each time, I've learned that hanging the roast with the bone down, facing the heat, gives a much better result. The heat spreads more evenly. The fat cap renders better, dripping over the meat, protecting it and adding to the crust. Less fat drips onto the coals, reducing flare-ups and minimizing the thick acrid smoke. The ribs get done better for those who like to eat the meat off the bone. Love your videos, and absolutely love my barrel!

Got my Pit Barrel at Christmas, so far I,ve done the pork ribs, beef ribs and pork shoulder, couldn't be happier, so easy and taste is amazing

Awesome job on the Prime rib Noah. That was to the point.I see you like the Dexter Knives so I can assume you used a Dexter slicing knife for the prime ribe.I need a good slicing Knife .Thank you, Cris

Isn't hanging the meat this way essentially the same as laying it on a rack? The meat is positioned the same way (horizontal) as it would be if it was sitting on the grill grate. I understand hanging chicken and ribs vertically but as far as hanging bigger meats horizontally whats the difference between that and laying them flat?

Hanging the meat in the center of the barrel allows the heat to move up and around the food. Cooking the food from all sides at once produces more consistent, great tasting results. you cut the bones off so you can season inside the meat and between the bones which is why he tied the bones back onto the meat. plus it makes it much easier to slice after.
