The ninja was probably reacting to the slashes as a subconscious thing, even he thought the pro samurai had sliced him to pieces because of how pro he looked.

Except, for that one time, when he got dirt in his eye from a watertribe-student of his...but neither this young swamp-bender, nor his fish-companion seemed to have blinded him in any way, so there's no reason for this so-called professional, to be that reckless while using his sword. So you're right Sifu Kotte and Master Piandao would surely agree with you: Keeping your eyes open during a sword-fight is vital!
