The separation of the starch granules from the tuber in as pure a form as possible is essential in the manufacture of cassava flour. The granules are locked in cells together with all the other constituents of the protoplasm (proteins, soluble carbohydrates, fats and so on), which can only be removed by a purification process in the watery phase. Processing the starch can therefore be divided into the following stages:
1. Preparation and extraction. Crushing of the cells and separation of the granules from other insoluble matter (i.e.' adhering dirt and cell-wall material) including the preparatory operations of washing and peeling the roots, rasping them and straining the pulp with the addition of water.
2. Purification. Substitution of pure water for the aqueous solution surrounding the starch granules in the mash obtained in the first stage, as well as the operations of sedimentation and the washing of the starch in tanks and on flour tables, silting, centrifuging, etc.
3. Removal of water by centrifuging and drying.
4. Finishing. Grinding, bolting and other finishing operations.
This method of processing is essential in the preparation of any kind of starch. For cassava, however, because of the relatively small amount of secondary substances, the separation at each stage is performed with great ease. Whereas with maize and other cereals the grinding of the seed and the mechanical separation of the germ and the pericarp from the grain present special problems in stage 1, and the separation of protein and other constituents in stage 2 can only be accomplished with the aid of chemicals, these operations can be reduced to a minimum in cassava preparation. It is indeed possible to obtain a first-rate flour from the cassava root without special equipment by using only pure water. This makes the processing of cassava flour particularly suitable for rural industries.

Audrey Stamm I agree, and sanitary or not it’s probably not killed anymore over there who eat it. Plus, they’re probably doing it in an older method. Even in America there’s the old way and new way of doing things, it all had to start somewhere.

Oh sod off, they're doing it the easy way and still skimping on sanitation to boost productivity. Regardless of their reasons they're being cheap and unhealthy and plenty of other poor nations that use cassava as a staple maintain a higher standard where it's affordable, and just let the customer prepare them themselves where it isn't. This shit is just unscrupulous.

@@conniemiller411 they arent doing jack the old way. the old way is washing your hands and using a good sharp knife and a clean grindstone and putting in some elbow grease. This method wastes a ton of flesh with the skin. Think how many more growing salts and pesticides they use to offset that waste. They're putting productivity before quality just like the mass producers everyone in the comments are bitching about. At least they put some measures in place to protect the consumer, but y'all just want to complaint about 'chemicals' and be self righteous luddites for the sake of it. See poor people doing something and act like it's magic cause the grass is always greener on the other side.

I do love cassava cakes, and cassava pan cakes we called maruya, cassava suman wrap with banana leaves and steamed it, actually there’s so many kinds of cook u can do for cassava and it’s healthy than ur regular flour. And drying it like this really deserved them a nice home pay check.

But don't confuse it with being the total source of today's tapioca pudding. The tapioca pearls may contain cassava starch, or another starch plus other ingredients to make the pearls in the milk pudding. This is from the cassava root that is sold in stores as Yucca that people will say it should be spelled Yuca, but it's pronounced Juca. It's not the desert plant named Yucca, it's Juca. Don't know why the root isn't just sold as Cassava or Juca.

Lucas, I'm so sorry to hear. This makes my heart sad that you barely survive. I don't know what to say...I cry for those who don't have enough. I pray for those who don't have enough but what else good does that do....it doesn't help those in immediate need. Is there a Catholic charities church around you that can help? Quite interesting. Nigeria is the largest producer of cassava in the world but we are yet to produce it into flour. Wheat flour is pretty expensive now and this process might just be a life saver. I will like to get more details on the process equipment thanks.

Am not saying this in a negative way, I admire all the work, that I see going on, Am just concern about the way it is prepared, Meaning that everything is done mostly on the ground, I believe a little investment could be made to accommodate the workers,give them long tables,preferably stainless steel, matter of fact, everything should be, stainless steel, it's easier to clean up, and better sanitation,,, Hope you get some ideas, after all ,what you want is a safe product, Blessings,

The fact the starch water is muddy brown instead of white should tell you enough. They're being really slapdash about this and being in a country where its the norm to make your own this is just upsetting

Why do you assume dirt is bad for humans...its just minerals... Even if he is not wearing gloves, so long as you don't eat raw Cassava, even the microbes he gets on the Cassava will be killed when cooked...the issue is what happens after you cook something...if you get sick it is likely something you did in your kitchen not something that happened during processing...

Not sure mentioned already but the following suggestions if you could incorporate: 1) Should peel before washing 2)drying or desiccation process 3) after drying then milling 4) Improve standards by appropriate factory wear 5) especially after milled flour if you can help prevent the manual raking by some mechanism that can tilt the flow of the flour into packing bags ... cheers!

The very important is that cassava is clean thourouly by washing it and put it in elevated and secured container to ensure cleanliness .Use other container to avoid raking equipment.Sanitation is number one 100 percent sanitation should be given the highest priotity even to the extend of washing the cassava a million times do it.

This is amazing! I have a lot of yuca on my farm and looking to make flour to make it more stable. Due to the high moisture content of yuca, I've found it goes bad and rots often times before my town can sell it. We current do everything by hand so it takes days to process this much yuca. Would you be willing to go into more detail on what types of machine you are using and how I can setup a similar operation in Central America?

Don't know about the machines, but if you grate the yucca by hand, use cheese cloth to squeeze out the moisture and place it in the sun to dry, you will end up with flour. It's alot of work but it can last a long time. Hope this helps.

Sa bundok namin ginagamit ko sariwa. Di ko kilala tapioca nun hahaha. Kc gawa sa sariwa lahat kmi. Ngayon dto sa US kamoteng Kahoy parin sariwa ginagamit ko paggawa ng kong ano ano. Balatan ko kamoteng kahoy Wlang natirang balat ah. Madulas balat nun. Madali balatan.at pasok sa juicer at iwalay na sabaw at laman. Kong gusto powder patuyuin. Tapos clean and safe pa.

It's a process... hard work but very rewarding to those of us who have ever had cassava dumplings cassava bread, cassava anyting. Much much healthier than flour or rice or even cornmeal. And for all you cleanliness label independent folks... how come these people have less diseases than you all.

They don't. Im glad i make my own damn flour for my dumplings because a little elbow grease is totally worth not having the starch water that's supposed to be white, looking like brown pond scum running off the press. They care more about productivity than quality and it fuckin shows.

IN my homeland we sun dry the cassava first after sun dry for two week then we make flour it good hey guy's you should try it with fish or chicken
