Turkey 🦃 Season is upon us. While we didn't take you guy along with us, when we "did the deed" and harvested the birds themselves - there's still a TON of work to be done. We have just over 85 POUNDS of meat we have put up from the (4) turkeys we raised this year. So come along with us, as we share how we're things just a little bit different this year. Having grown up on a small family farm, I understand the difficulty of harvesting animals. However, a prayer of thanks for the life of the animal each time I eat helps to orient me to the life I live and how dependent upon each other we are -- animals and people. It helps to be more conscious of the blessings of this life, including the sacrifices that are made for my benefit. Yes, harvesting is hard, but a grateful heart can keep one from being cavalier.

When you think about it, 7 ounces is a standard amount per person for lean meat. that is 194 meals of meat not counting the broth from the bones.

When vacuum sealing moist items, I will put part of a paper towel just below the sealing area to keep moisture from coming up into the seal. We also use generic bags from wally world with great success.

My kids and I helped dispatch and processed our thanksgiving turkey a couple years ago. It it a good experience for everyone. Nothing was wasted, and the birds fed us for many months.

It's the turkey meat that has a lot of moisture. and corn too does the same.. Putting the bags in the freezer for a few hours .. they will seal up just fine.

I'm so sorry, Rachel. You are obviously in pain. Prayers for a speedy healing. If your finger is at an angle though, you might ant to have it set straight so you do not loose mobility when you are in your later years (arthritis etc).

I always have to take a step back when I hear people talking about medical treatment vs. cost. I'm not sure why Americans didn't want universal health care; but, I couldn't imagine life without it. I could never imagine a life where I would have to consider cost for treatment, or live in fear of being bankrupted because of a medical crisis. Bless you and stay double safe.

Because we didn’t want the taxes it takes to run universal healthcare. Someone pays.. and it’s NOT the government.

Because we have been taught that government single payer Healthcare would make our taxes astronomically high and the government would ration our care. Healthcare professionals have been told their income would be substantial less and they would be restricted in providing services. So instead we have high taxes, high medical insurance premiums (even employer sponsored), get denied for services, and still end up paying large bills out of pocket. Medical professionals earn less, pay more, and have insurance providers restricting their recommended care.

If your finger is dislocated, you could be causing yourself permanent nerve damage if you don’t go to the doctor and have them pull it. It’s not that normal for the pain to get worse and worse for just a sprain. So you might want to go to the doctor. 💙💙💙

We add the skin when we grind the meat to add extra fat and flavor. Also...amazing burgers when you add very fine diced onion, jalapeno, cilantro, spices (cumin, S&P) a bit of lime juice and shredded cheddar cheese.

People who hunt game birds do it all the time; but it will make for a drier meat without the skin/fat. ✌

Turkey and yellow curry with coconut milk is just a great combination. I use my curry in a hurry recipe for both chicken and Turkey.

COMPLETELY agree with deboning turkey drumsticks after cooking. The tendons in mature turkey drumsticks are a bear!

Add some cranberry chutney, cranberry jam or even fresh cooked cranberries to the meat along with eggs and sage. Yum! It's so delicious!

Rachel go to the doctor! If it's broken and dis-placed they can straighten it and set it. You don't want to lose function in your hand if it could be prevented! Love your videos keep up the good job😁

Our daughter and her husband raise chickens, rabbits and pigs for consumption. They tell everyone they know their meat is well fed and well cared for. When it’s time for ‘dispatching’ they do it with a prayer and thank the animal. I’d flavor the meat like you would for roast turkey…sage, poultry seasoning etc. maybe doing only one turkey at a time? I know! Two food savers!!

I’ve made a turkey sweet potato apple hash for breakfast and it’s so good! Brown your ground turkey, and in a separate pan cook your chopped sweet potatoes, mushrooms, apple and kale. Add salt, pepper, and rosemary. So good!

I do, too. Maybe pluck a couple of brace for DPs, but usually just skin and cut the breasts out of pheasant, duck and pigeon; throw the skinned legs and most of the giblets into stock pot, sieve and skim, then freeze for soup stock.

So since you've had both hybrid and heritage turkeys now what will your decision be for the future? Will you stick with ones you can't reproduce or possibly go back to the heritage in case chicks run low again? Price hikes, shortages and all we're going through is causing us all to really rethink what has become routine to us. Through prayer I've restructured all our animals and what their purpose will be for the future. We all want to leave something for our grands just never thought it would be food. You guys did really great on your turkey harvest and the garden was amazing this season for ya'll!! Thanks for sharing!

We use a Cabellas Food Saver, try packing 1 pound portion in a zip lock bag and freeze that for a few hours and then vacuum pack the zip lock

I use turkey for meatloaf a lot. I add onion, egg and breadcrumbs to the mix, you could add zucchini too. I top with tomato sauce before cooking to add extra moisture.

We make 1/2 turkey and 1/2 beef burger patties on the grill no need for any extra additives in the turkey meat...Delicious!

We have used vacuum sealer but found using plastic wrap & freezer paper works better for us. It's less expensive, customizable, protects from freezer burn & no machine needed. The plastic wrap & freezer paper stands fits in a base cabinet drawer. Just open the drawer, pull out what you need, close the drawer when done. It's a great convenience.😊

I used a Food Saver for years as my main way to vacuum pack bulk foods. I finally bit the bullet and bought a Vac Master 215. WORTH EVERY PENNY! The bags are sooooo much cheaper. Only way to go if you pack bulk!

We eat a LOT of ground turkey. When I make turkey burgers I add a little oats (I grind it to somewhere between rolled oats and what you'd find in a packet of instant oatmeal). Sometimes I'll add an egg but not usually. I use ground turkey for spaghetti sauce, taco/nachos, eggroll in a bowl (along with some ground pork). Basically anything that most people would use ground beef for. For some reason I don't like ground beef anymore. I really hope that your finger gets better soon.

I always pop the meat I’m working with in the freezer to seal the juices in and then use the vacuum sealer.

I guess you could get around cycle time by sealing every bag as soon as its bagged. So one person places the turkey in, the other person seals it while the other is bagging the next patch and if you can fold the bags at the same time. You just need to develop a good cycle. I used to work as a Dental assistant where we used to seal our own steri bags and it went a bit like that.

We raise our own meats. Chickens, Beef, Pork but we have never grown turkeys. We really like ground turkey. So we may fo that next. Thanks for sharing. I hope your finger gets better soon.

Our turkeys are headed to freezer camp tomorrow. I think we might try your method for the ones we are breaking down. My plan was to smoke the turkey legs and use them for soup later. We did six this year and also purchased a heritage breeding pair so we will see what we eat next year.

Costco has an AMAZING umami seasoning for like $6 by the dry spices. It is pretty much powdered mushrooms, onions, mustard, and salt. Fantastic in ground meat and sprinkled on roasted veggies.

I was never a big fan of turkey sausage but we tried A.C. Legg's Pork sausage seasoning and mix it with ground turkey and we love it, we get it from amazon.

They need to be raised in at least pairs I would suggest 3 as a minimum in case you loose one. They a very flock orientated birds.

We always skin them! Way easier! We raised 3 turkeys this year we have butchered 2 and have 66# breast and leg/thigh. Still have one more to butcher!

Salisbury steak made with Turkey is phenomenal. Use the same gravy. Mashed taters and green beans as a side. Yum!

Try putting something underneath the package your ceiling to make it level that works for me and I use bags off of Amazon and mine work fine just a thought

We have two foodsavers that we use when we process deer meat. We bought a new one thinking the old one was dying and it was the cycle time you were referring to. Every year now we use both, making the bags, then vaccuum packing and sealing them later. Makes it quicker as we don't have to wait for the sealer to cool down.

I love a good oven roasted or even better, smoked turkey leg! YUM! I learned from Joel Salatin that harvesting your farm animals is never and should never be easy, but very rewarding. I believe that our animals should only have one bad day and even that day we try to make it as peaceful as possible. Great job Y'all :)

To keep your turkey moist, I use mushrooms. I love a turkey meatloaf with mushrooms and onions.

Smoke the drumsticks before freezing and use it for bean or pea soup. Also turkey sausage and premade meatballs are great too as a use for some of the ground meat. You would need to use fat too.

The lower wing meat put that in crock pot along with bones cook till meat falls off the bones ( makes great pot pie meat) drain liquid for broths. Don’t throw out any potential meat it can all be used .

I always use ground turkey in my chili (and goulash) as well as for (gulp) taco meat.

Great idea skinning the turkeys. I was impressed with how well your grinder went on the small setting only. I tried it once on my hand operated one. It didnt go well. It clogged up too quickly. Lesson learned though so thats a positive. Hope your finger gets better soon Rachel. Good on the young lad for coming down to watch/learn. So many kids these days just dont have an interest in seeing how things operate on a homestead. I think it’s a good for them to see from garden/paddock to plate. Sure makes me appreciate my harvest more I can tell you that much.

i always add a little bit of avocado oil...spinach and feta cheese crumbles to my ground turkey...makes great turkey burgers

Very interesting video. I don't plan to raise and process a large amount of turkey but did purchase and grind store bought chicken breasts. I made chicken burgers with shredded zucchini, onions, etc. The trick is to season with herbs like rosemary, thyme and other poultry seasonings. I sometimes use my favorite Bell's seasoning that is used for stuffing or dressing at Thanksgiving. I never used mayonnaise in my meat but that makes sense. I used a tbsp of a neutral oil like canola with other additives. I made meatballs and meatloaf with the ground chicken too. Love your channel. We raised and processed poultry in my childhood. I loved seeing and hearing the turkeys in your videos.

Well can I ask you then how exactly to you do that? I'm kinda kind of confused on if you cut the skin off before you gut it? I would think it contaminate the meat

Our family fave for turkey burgers- I take ground turkey, mix on (homemade) Italian seasoning plus a little salt and pepper. I make burger patties wrapped around a slice of mozzarella from a mozzarella log then wrap the burger in prosciutto and grill. Toast your bun, add a little garlic olive oil, basil leaves and tomato slice. Soooo good. With zucchini fries on the side. 😋 I don't measure, I go by eye. I usually get 4 nice burgers from about 1 lbs ground turkey, use most of the mozzarella log and about half a pkg of prosciutto. You can always wrap 2 slices around each patty to use it up if you don't usually use that.

Nice harvest guys! We got turkeys for the first time this year and we love their personalities! Curious and so sweet! I love them more than the chickens. We got Narragansett which is a heritage breed. So beautiful and grateful! I don’t know if I could harvest them. They are my pets. I get the cheap generic bags from Walmart and they work just fine.

Turkey drumsticks are amazing when you smoke them they are so good and did you ever go to a state fair and get a smoked turkey leg? When you smoke your own it's even better

My sister in-law just made taco burgers and they were so good! Ground turkey, add 1 T taco seasoning per pound, egg and crushed tortilla chips. Form into patties and grill. Serve on hamburger buns with salsa, tomato, avocado, cheese and lettuce.

In sausage making we always add a bit of pork trim to it. Your thigh meat would be more moist.

I can part of my turkey meat and I love having it fully cooked for turkey salad, buffalo turkey dip, soup, really anything you would use chicken for
