Its actually kind of disappointing to see that attitude from "chefs" (probably self-proclaimed). Breaking it down the two chefs who didn't win did some really odd stuff. For example, the whole point of doing a reverse sear is to make sure you DON'T overcook the meat. The fact both other chefs thought it was dry means she messed up the most time consuming part of her dish. It also pissed me off when one of them was saying the sauce carried his dish. First of all, the other two used seafood and sides on theirs, he was the only one who actually did just a porkchop. Second, he brined his porkchop, so it would have been saltier and more moist than the other two dishes. The fact someone said the meat wasn't that flavorful instead of complaining about it being too salty makes be suspect they were just making stuff up. Some other stuff also shows a bit of inexperience on the other chef's parts. Reverse sear is usually used on fairly thick cuts of meat (2-3 inches) to maximize how much pink center you have in beef (not that you can't use it on pork). On a 1 inch piece of meat the benefits are negligible and it takes way longer to do a reverse sear than a pan sear because you have to heat the meat slowly in the oven before briefly searing the outside. It's a really odd choice for a thin porkchop for someone working on a resturant's time frame. The other chef complained about pink being in the center but there are ways of cooking pork safely and keeping a pink center. Also, the chef who seemed surprised that the other dishes were sweet was weird. I don't love many sweet pork dishes myself, but it's an extremely common way to prepare pork, especially BBQ style pork. The brine and the less-well done cooking time shows he made a lot of effort to ensure the pork was tender, which can be a problem with porkchops. So I'm not saying the chefs cooked anything wrong, but they made some weird choices and comments that seem to indicate they don't have as much experience (or even time spent researching) as they like to pretend they do. Don't take my word for it. Look up reverse sear, safe pork temperatures, and brining meat and read a few articles. You'll see there's a lot of different attitudes in the cooking community about them but you'll find the pros and cons of each technique.

@@StewNWT Good thing it wasn't raw, then. A SLIGHTLY pink chop is not going to hurt anyone. And it will be a more enjoyable experience. You don't observe doneness with color, you observe it with temperature. If its 145 or above, it is safe.

Sherry sounds like a home cook who calls herself a chef. Especially with her story. I used to work in catering. No one would serve a group that went from 50 ppl to 200 ppl AT THE EVENT, and then continue to work without a pay increase. And even the way she was judging. None of it made sense.

@@laiiii244 honestly I don’t have experience in the culinary industry beyond ordering and eating the food, but anybody who would continue to cook at an event whose guests(participate’s whatever you call them) were suddenly not 2 nor 3 but 4 times more then what you were told without asking(demanding) a better pay for the job, is crazy or desperate for a job/money, like a few extra guest is one thing, but FOUR TIMES the amount that YOU were told would attend.

Sherry had a cookbook next to the stove the whole time, reading line by line, checking off each step as she went. That's how she was taught at the YMCA cooking class on Thursday nights. She used an older model hot plate that only heats half of the burner, so she had to compensate for the lack of even heat by cooking it longer. Unfortunately, her instructor, Mrs. Hattie didn't teach her about what the internal temp of pork should be and that's why it was dry.

@@katiecampbell1925 I’m sure the ENTIRE world agrees with her pork should be ‘done all the way through’. That means it should be cooked to the correct safe temperature which is 145 degrees Fahrenheit. Slightly pink doesn’t mean undercooked. Meat thermometers are a must. Sherri can’t cook.

I would like to see a video of each chef explaining and telling how they cook certain foods and then let the other chefs cook it that way. Then see how close they got to the other chefs recipe. Basically same recipe from different chefs

That’s a good idea. See how average people rank different dishes. The people who cooked the dish would likely be biased and give lower ratings in hopes that their dish gets a higher rating.

Totally agree. I get offended when folks put milk and sugar on their grits...Grits get butter, salt, pepper. Period. Gravy is made by cooking sausage, NOT draining it, sprinkling it with flour, stirring and cooking it for a few minutes, then adding milk. Bacon grease goes in it's own little covered container in the fridge so you have grease to cook with. Iced tea isn't iced tea unless the pitcher has more sugar in it than the Kool-Aid does...added when the tea was still hot, of course. A proper pie crust is made with lard, not shortening. If it needs thickening, you use a roux..not corn starch. If it is not desert and doesn't have onions and/or garlic, you forgot something. If you left my home hungry, that was YOUR fault...even if I didn't know that you were stopping by. Exactly what "culture" am I? You guessed wrong. I'm male, white as a sheet and from WA state. Good food, good cooking, and good manners have NOTHING to do with "culture", what you look like, or where you are from. I tend to cook "southern things" in the traditional manner because the methods have stood the test of time.

@@solistardust33 LOL. Now that I have touched on THAT sore spot... I make a dark roux with flour and oil. In a cast iron skillet. In the OVEN. How's that for "white"? Seriously. Mix it up and throw it in at 350. Stir at least every 30 minutes. Light brown after 90 minutes, dark for gumbo will take about 2 hours. Takes forever, but hard to mess up. Handy when trying to corral kids while cooking.

Culture is RELATIVE. Just because something is not cooked the way YOU are used to doesn't mean it doesn't have culture! I'm convinced Sherry is just a home cook and claiming she a chef. The way she was picking at her food was like watching a child try veggies for the first time.

Well my mother’s family is black and from Louisiana. Idk much about how “all” black people like their pork chops as I don’t eat them, but I know I have a cousin an aunt and cousin, on my mother’s side who order their pork chops as medium. Idk you could but if we go to upscale dining places, you can order pork chops the same as you order steak. Well, almost. They won’t serve it rare, of course. Also, this isn’t about personal preference but there is no culinary school in the world that will tell you to serve any protein well done. Let Sherry take that pork chop to Gordon Ramsey and see what happens…

Pork not cooked through is dangerous and cause medical issues, it can still be cooked through and juicy at the same time I do it all the time.

Bring the blindfolds back or come up with a different way for them to taste the food without knowing who cooked it. Some people are unfair with their ratings because they want to increase their own chances, and it's not fun to watch when some contestants are purposefully undercutting other people.

When I cook pork chops, I cook it for 4-6 hours at 250-275. Comes out fall apart tender and juicy. I use garlic, salt, onion, sage, thyme, and pepper as the seasoning. I've never had a complaint and when I make a big pan (about 10 lbs.) it's gone in about an hour.

7:44 Brining your pork chops will change everything. Submerge them in cold water with a bit of salt and brown sugar overnight. Then pat dry, season and cook. It changes every single aspect about pork chops. You'll never go back.

I've always loved my moms pork chops the best ones I've ever had and I didn't try to cook them until I was in my 30s. I do pretty good with em now with the gravy and everything 😌 still haven't fried chicken yet though 🙃

It's always interesting to me to see how black chefs specifically cook pork. Will they overcook it like many black families or will they go back to their culinary training where they learned that it's acceptable and preferred that it be a little bit pink. I think Sherry couldn't get past her roots on this one, everyone's porkchop was undercooked for her.
