Learn to make our family recipe for Puerto Rican Sancocho. It's a savory meat and root vegetable stew that-- hands down-- the BEST comfort food! Some of these items (root vegetables specifically) are hard to find depending on where you live. Fruterias, bodegas, or going to a supermarket in a highly Hispanic populated neighborhood is your best bet if you are new to this recipe or type of food!
Below is a detailed recipe so have fun, make this your own with your own preferences and see why so many in the Latinx Community LOOOOVE Sancocho!
Ingredients:
-1/4 cup of olive oil
-Turkey sausage of your choice, cut in chunks
-3 chicken breasts, cut in chunks
-3 tablespoons of Adobo
-3 Guineos Verde, cut into mid sized pieces
-3 Yautia (Lila/purple and/or Blanco/white, your choice), peeled and cut into chunks
-1 cup of pumpkin/calabaza (cut into chunks)
-1 Malanga Lila, peeled and cut into chunks
-1 Chayote, peeled and cut into chunks
-1 Batata, peeled and cut into chunks
-2 tablespoons of salt
-1, 32 oz box of chicken stock or broth
-1/2 cup of sofrito
-1 small can of tomato sauce
-Pitted green salad (with pimentos or red peppers preferred!) olives to taste
-4 bay leaves
Instructions:
-Peel and cut the root vegetables/Verduras, rinse them as well.
-Heat up olive oil and sauté your chosen meat
-Add sofrito and cook on medium high heat for about 5 minutes
-Add tomato sauce, salt, stir and then add the root vegetables and toss it around with a large spoon trying to coat them with the sofrito/tomato sauce mixture.
-Add chicken stock, bay leaves, and olives. Cover on medium heat and let simmer for 20 minutes.
-Do the fork test on one of the root vegetables like you would a potato to see if it’s ready. The broth should be thicker than when you initially covered it. Determine if it needs more time based on your fork test. If ready, serve over white rice and enjoy!

My Puerto Rican mother in law taught me to make Arroz con Gandules. (I'm a gringa). The whole family prefers mine to all others!!!! Sofrito is the key.

Oh wow, I'm here in Chicago too, and how did I not see your videos? I love it. I also have the Puerto Rican Cookery, and I use it like a Bible. Thank you for this video, and the time you took to show, and you are so right, in Puerto Rican families like ours we do not run to buy measuring cups or spoons or any of that, the ONLY thing we do measure is the rice, because the rice is sacred to us, is the base of every dish we cook so it has to be perfect, other than that, we have down packed the quantity we will be using on condiments, we do not measure and is true. I hope people knew how hard it is for us to show how to cook using measurements!. stop, record, stop record, because we forget.

So true I just made a huge batch of Sofrito. I have enough to last me for a couple of months. I just made a stew with chicken and most of the vegetables that you’re using although I added yucca and sweet plantains. So I guess it was kind of like a Sancocho just without the sausage. But the next one I make I’m gonna make it with the turkey sausage. I did use one leg of a smoked turkey which Kpop a great flavor.

When i do sancocho i put ribs .pork . chicken.and Beefcubes anyway put everything in the sancocho that's the traditional way Puerto Rican way i from my father and mother may they rest in peace 🙏🙏

If you didn't soak them in hot water... you can run the hot water and peel them under the running water!!! Voila!

Please be careful using aluminum to cooking. It’s not the healthiest material to use a high heat. Cast-iron or stainless steal would be a better option
