basic puff pastry dough to make various kinds of puffs ,tarts etc Puff pastry is like a pie crust that raises high with no leavening. There are four main ingredients in puff pastry which includes the: flour, butter, salt, and water.

Ingredients
Directions
220 grams butter
220 grams maida/all purpose flour
1 pinch salt
4 drops vinegar
110 ml water
Directions
• In a bowl melt 4 grams of butter.
• In another bowl add flour, salt, lime juice or vinegar, melted butter, water and knead the dough.
• roll the dough in square shape and add the rest of the butter and seal it spread the dough and sprinkle flour and fold 3 times and keep in the fridge for 10 min repeat the same 6 times and in the final roll the sheet evenly all the side and cut into square shape.
• use these sheets for egg puff or veg.

I tried this recipe about a year ago. My first time making puff pastry. I needed it for a beef wellington recipe and did not want to use a store bought dough. It turned out great and it was easy to follow the instructions. Greetings from the Czech republic:-)

What I liked the most was that the chef explained the technical reasons for what he was doing. That helps to gain more perspective. It shows that the chef knows what he's talking about. I really liked the video and subscribed to it too! Kudos!

i dont cook, bake, or really do anything aside from the basic can of soup and sandwich... but he makes me want to make things. easy to understand and explains what he's doing and why. love it!

Oh my God, you don't know how grateful I am of finally have found this recipe. I have never been into pastry or sweets, but I decided to go for something new and with age your tastes change but by the same token I do not want to spend to much time in something too difficult and when I found your recipe for puff pastry you made my day. I'll be practicing now, I have been told so many times I am a very good cook, maybe now I will become a good pastry maker.

Tried this today and it turned out perfect...like coming out of a Bakery. And using butter instead of margerine or Vanaspati Ghee etc is better as its healthy and doesnt have artificial chemical taste. It made almost a dozen veg puffs of medium size from this quantity of Dough. And it took me 2 hrs from start to finish which includes preparing the filling and assembling it together and baking one batch. I baked at 420F for 15 to 20 mins. Our oven is not convection and so it takes longer and I had to flip them in between to brown both sides. Thank You.. Thank You.. Thank You Chef for such amazing tips....Love and Hugs. This was first time I tried a Puff Pastry Recipe.

Thank you ghost. One thing I learnt as a Chef, is not to be arrogant when it comes to recipes, and their variations. People adopt their own tricks, prefer more or less of an ingredient and discover which method or recipe quantities work best for them. I agree, the end result here in this video was as expected! :)

VahChef: Thanks for your video. I learnt to make all types of pastries when I was in school but forgot how to do it. I am now back into baking and you really helped me. I can't remember if we melted the butter at the beginning, but that does not matter. This is the technique that I was taught but I forgot how to do it. I will feel confident when I make it.

excellent tutorial! I always wondered why my pastry on my first try was not puffy. The key is in the folding and keeping the dough cold. Thanks for making it so clear! Look forward to trying it myself :)

Thanks to this chef I can make samosas, that I used to enjoy so much when I was going to university and living in the city, people of all nations would bring their native foods to the Saturday Farmer's Market to sell :) I always would get samosas, they were my favorite! I also liked souvlaki on pita bread, from the Greek families. And, asian spring rolls. Good video! I wonder if I can roll the dough thru my pasta roller machine?

Of all the videos I've seen about making puff pastry, this one has been the most detailed and best explained of then all. I appreciate it and can't wait to make this recipe. :-)

I tried it out. I used frozen, grated instead of putting a whole slab of butter in. It did not need to be put into the fridge every time. It came out well. It puffed well.

I tried your puff pastry recipe and it works just great. puffs turned out really soft and fluffy. thanks a lot for sharing. My suggestion, i just put the dough in a refrigerator overnight and it got cool enough to roll it multiple times at once. not so hard as it looks in the vid:) enjoy!

a good tip for when handling the butter and the puff pastry from becoming to warm from your hands is to put your hands into ice cold water and it makes it easier to handle the butter and pastry so that it wont become soggy from your hands ^^

Julia Childs did it the Indian way. Butter being added with each folding. That's the way I do it too. But this is also a good way and less work. I will have to try it. I think you are a wonderful chef.
