The part I don't get - it's in the smoker for a few hours at 107C (225F) then he wraps out and puts it back on to cook to internal temp of 95C (203F). Wouldn't the internal temp be higher than 95C after the initial smoking period? Or does it take longer than a few hours to get internal temps up??

No the internal temp takes longer than than a few hours to reach 95c. It would probably be around 70c internal when he wrapping it in foil

Great stuff but surely, as part of the Australasian BBQ Alliance, we have to be talking in Celsius and not Fahrenheit. It's so frustrating!

He says Fahrenheit later in the video. It also has a caption the gives the temperature in both.

Ryan Edwards - more and more of us in Australia who are into smoking or low-n-slow use Fahrenheit not C. It’s just more accepted universally.

lol. No the 225 temp is the ambient temperature of his smoker, not the internal temp of his meat. His internal temp when he wrapped was around 168 degrees. From 168 he goes to 203 degrees. Dont trust the thermometer tho. The meat is at its juiciest when you can slide the thermometer in and out like butter. You digg???

Celsius FFS. If you want to use Fahrenheit, QF7 to Dallas leaves in about 12hrs time.

I stupidly went into their store, and they were all quoting in Fahrenheit, as a lot of their smokers are not coverted... no excuse. he was using metrics weights yet temps were in Fahrenheit. I quickly ordered my smoker online from Z Grills and am glad i did, their smoker has temp reads in Celcius

Nice vid, don't worry about the kids commenting who don't know what Fahrenheit is. If you are into BBQ nearly all the content is from the good ol south in USA so best to learn the real temps in °F. If you think Australia is metric you're kidding yourself anyway, even today it's all still based on conversions of imperial system. Metric is for Asia

I will echo the others, why Farenheit. It's bad enough I bought a Traeger (love it) and the temperature setting are in C but the accompanying cookbook is in F. This is Aus, we are METRIC. BBQ Galore should stipulate all products, cookbooks they sell are C

How is this a whole lamb shoulder with no bones? You ask for a whole lamb shoulder you'll get some ribs, hock, prime and shoulder and all the bones....?

whats with the Fahrenheit shit this is Australia - why do all these Australian bbq guys just want to be so American ? also sausages are sausages not hot links and hot chips are chips not fries get over you self guys. really sad. Good recipe though
