Healthy and delicious, made with purple sweet potatoes & glutinous rice flour. This traditional Angku Kueh/ Ang Ku Kuih, also known as Red tortoise cake, signifies long life and prosperity. Traditionally red in color and filled with varieties of fillings.
Note: The wooden (45g) Angku kueh mould used in this recipe sold in baking ingredients store. You can also use plastic mould as well.
Ingredients 材料:
Purple Sweet Potato Paste 紫薯泥馅:
200 g purple sweet potatoes (peeled) 去皮紫薯
70 g (3.5 Tbsp) condensed milk 炼奶
30 ml (2 Tbsp) vegetable oil 菜油
Dough For Angku Skin 皮料:
±65 g purple sweet potato paste 紫薯泥馅
120 g (1 cup) glutinous rice flour 糯米粉
12 g (1 tbsp) sugar 糖
A pinch of salt 少许盐
±95 ml (±3/8cup) water 清水
15 ml (1 Tbsp) vegetable oil 菜油
