As a long snapper who knows a little bit about special teams, you don’t know how the ball might roll or something might happen, so ig its just better to be safe than sorry. I could be wrong though.

Not just you. I suppose he had his back to the line - if he had stumbled back picking it up from further back and put a foot in the endzone while grabbing it that would wreck it. A hyper-cautious approach to many things seems to me to pervade this sport. I reckon rugby players must get enormously frustrated when they watch because so often there are plays where one more ('lateral') pass would result in a touchdown but players won't risk it when they've already got a first down, so they just wrap the ball up as securely as possible and submit to a tackle.
