PYAAZ KI KACHORI
Preparation time : 15 minutes
Cooking time : 20-25 minutes
Servings : 2
Ingredients
For Kachori Dough
1 cup Refined Flour (मैदा)
½ tsp Carom Seeds (अजवाइन)
3 tbsp Ghee (घी)
Salt to taste (नमक स्वादानुसार)
Water (पानी)
For Powder Masala
2 tbsp Coriander Seeds (धनिया के बीज)
1 tsp Cumin Seeds (जीरा)
1 tsp Fennel Seeds (सौंफ)
¼ tsp Salt (नमक)
For Filling
1 tbsp Oil (तेल)
1 tbsp Ghee (घी)
Prepared Powder Masala (तैयार किया हुआ पाउडर मसाला)
¼ tsp Asafoetida (हींग)
1 inch Ginger - chopped (अदरक)
2-3 fresh Green Chillies - chopped (हरी मिर्च)
3 large Onion - chopped (प्याज़)
2 heaped tbsp Gram Flour (बेसन)
½ tsp Turmeric Powder (हल्दी पाउडर)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
Salt to taste (नमक स्वादानुसार)
¼ tsp Citric Acid (नींबू का फूल)
2 medium Potatoes - boiled (आलू)
¼ tsp Dried Mango Powder (आमचूर पाउडर)
2 tbsp Coriander Leaves - chopped (धनिया पत्ता)
Process
For Kachori Dough
In a bowl add refined flour, carom seeds, ghee, salt and mix everything once properly.
Now add water and knead a semi hard dough and keep aside for 10-15 minutes to rest.
For Powder Masala
In a pan add coriander seeds, cumin seeds, fennel seeds and roast them lightly. Remove and let them cool.
Once cooled, grind it into a coarse powder. Keep aside for further use.
For Filling
In a pan heat oil, ghee and add the prepared masala, asafoetida, green chillies, ginger, onion and saute until translucent or soft.
Now add gram flour, turmeric powder, degi red chilli powder, salt and saute until fragrant.
Then add citric acid, mashed potatoes, dried mango powder, mix and cook for a minute.
Now finish it with chopped coriander leaves and switch off the flames. Keep aside to cool down.
For Assembling Pyaz ki Kachori
Keep oil to heat in a kadai on medium heat.
Now take a small portion of the dough and spread it using your hand and keep it thick in central and thin at the edges.
Then add the spoonful of filling in it and close it up and roll light with a rolling pin (like a puri). Repeat for remaining dough and filling.
Now deep fry them in medium hot oil until golden brown and crispy.
Remove on an absorbent paper and serve hot with chutney or tea.

I have been into cooking since I was a kid. Now I'm 19 yrs old. My mom tried her best to keep me away from the kitchen but I just love cooking and baking so much. As a Rajasthani it gives me so much pleasure and satisfaction to see pyaaz ki kachoris being made in the way they are supposed to. Very few chefs actually are able to recreate the real recipe in their tutorial. ❤️ I can eat like 3 in one go for breakfast, its my favorite food.

I know I'm very late on this one. But I realize Chef "Jab jaage tab savera". I had gone to Prayagraj(former Allahabad) last month, and i got a chance to have pyaz ki kachori at the Rajasthani food stall. It was tasty. And then arose the Bawarchi in me:*. I searched for the recipe, and of course, it definitely had to be you. So chef, today i finally made the kachoris, and they were superb and amazingly tasty. The credit surely goes to you. You know the fun part chef, i told about tha slurry hack to my mom and i tried it. It absolutely worked:) and secondly, woowww..meri kachori sach me phoool gayi thi, as you said in the video. You are a genius chef. As i always think, today i say it. Whenever I'm cooking, the friend, the guide, the philosopher is always and only you:)

So lucky to have you in my life Ranveer Sir ❤️❤️❤️❤️ When I used to watch MasterChef & you as a judge in it I had a perception that you're khadoos but now I know you inch by inch & centimetre by centimetre & you're such a pure soul . I visited Jodhpur. It is beautiful city. Tried pyaz kachori in the market. Loved it. I googled recipe some Rajasthani people uploaded food videos used potatoes in the filling but I thought no potatoes needed. Maybe some other Rajasthani cities people use it for their pyaz kachori. I think this recipe is more specific to Jodhpur and it is delicious.

Sir, just amazing😍.. I was been at Jodhpur at least 6 times, had this taste kachori, tried to know the recipe authentically but never successful.. Thank you so much dear Sir,, you know the best part is the' khasta wala sound'you did... 😂🤣.. And when you cut the kachori in two part.. Wow it was a beautiful presentation of a neatly prepared kachori-- filling was nicely spreading inside the pocket...the dough making tricks-- thanks a ton .. Love you Sir🙏

I stayed in Jodhpur for a year for studies. And the Authentic Kachori from Jodhpur is one thing that my palette till date remembers ♥️♥️♥️ it’s a memory clearer than other memories I have of the place

Dear chef, I am also from Jodhpur. Like your other recipes, this one was also very wonderful. I did tried it making in my home and it turned out to be really very fabulous. However, I also request you to try and teach us making Makhaniya Lassi, another famous recipe from Jodhpur. During these corona times I am unable to enjoy Makhaniya lassi from the famous sweet shop (Janta Sweet Home) nearby. That’s why I am requesting you to teach us about making Makhaniya lassi. Makhaniya Lassi is also very awesome in taste. You also sir please do try it. Thanks.

No need cry while cutting onions, if you once wash with water after removing outer layer or cut onion into two pieces and wash once, no tears
