Qorma Ahmedabadi Written Recipe :
Ingredients :
Mutton 750 gm
Clarified butter ¾ cup
Brown onion grounded ½ cup
Salt 1-½ tsp
Yogurt 1 cup
Ginger paste 1 tbsp
Coriander powder 2 tsp
Cumin powder 1 tsp
Chili powder 2 tsp
Ani seed grounded 1 tsp
Allspice 1 tsp
Saffron ¼ tsp
Water 2 tbsp
Screw pine 1 tbsp
Method :
Heat ghee, add mutton, salt, cover and cook for 10 mins, add 2 cups water, cover and cook till mutton tender, beat the yogurt, mix in all the remaining ingredients, add into meat, stir well, put on dum till curd dries up and oil comes on top.
Gawar Phalli Tamatar aur Keri Written Recipe :
Ingredients :
Cluster beans chopped 250 gm
Raw mango 1 medium
Mustard seeds ½ tsp
Onion seeds ½ tsp
Button red chili 4
Onion chopped 1 cup
Curry leaves 10
Fresh coriander leaves 2 tbsp
Tomatoes chopperised 3
Salt 1 tsp
Coriander powder 1 tsp
Turmeric powder ¼ tsp
Allspice powder ¼ tsp
Sugar 1 tbsp
Oil ½ cup
Method :
Cut phalli, boil in water until just tender. Heat ½ cup oil, add mustard seeds and onion seeds, add onion with button red chilies and curry leaves, add all the dry spices with tomatoes, fry fro 3-4 mins, add the chopped keri and the green beans, cook for 10 mins, serve with roti.
