You could cut the plastic tray so even if you don't mix it carefully it won't mix with the other food. I think that's better, or at least that's what rrcherrypie does and she is so good at making these foods.

Sushi actually stands for the rice, sashimi is raw fish. Most fish in Sushi is smoked or cured.
