Eggs 4
Pinch of salt
Pinch of black pepper
Green onions
2 Tortillas
Mozzarella cheese 50g
Smoked bacon 100g
Spinach 50g
Slices of cheese 4-6
Crack eggs into a bowl, whisk with a fork. Add salt and pepper. Heat a skillet, add a little oil, pour half of the eggs. Place a tortilla on top. Once the bottom browns, flip and add the filling on one side. Start with cheese, then smoked bacon, greens, cover with cheese, fold in half. Cook on low heat. Repeat with the other tortilla.

Thanks for this good idea. I'm going to try cooking the bacon 1st, then add the egg, spinach, green onions and then the tortilla on top and then the cheese when flip it over

Yes, indeed, this bacon won't be crispy and well-done. It can be fried separately if desired. I like this variation as well.

Two hygiene risks. Contact between raw food and uncooked food (raw bacon and the cheese offcut that was not used in the recipe). The raw bacon would not cook through safely if merely folded in a pancake. This video should be taken down.

@@tmrttrnthere is quite literally a story out this week about a man with parasitic cysts in his brain from eating bacon that was not cooked well enough. Dirt and a meat known to carry parasites are not the same thing

Hello, thank you for your comment! I understand the issue, and it's indeed my oversight. In the video, the bacon is smoked, so it can be eaten without frying. I've updated the description to avoid causing any more confusion :)
