Macapuno or coconut sport is a naturally occurring coconut cultivar which has an abnormal development of the endosperm. The result of this abnormal development is a soft translucent jelly-like flesh that fills almost the entire central cavity of coconut seeds, with little to no coconut water. The taste is also very different from the regular coconut and you have to add sweetener to appreciate the flavor. So making a macapuno preserve is essential not only to preserve the fruit from spoiling, but to make it sweet and good to eat. It best used for fillings in bakery products, pastry and even for salads.
