Fast usually focuses on speed of movement, and quick focuses on time. Fast things are often quick, and quick things are often fast. Fast is an adjective and a adverb. Quick is only an adjective. Quickly is an adverb.

Simple. Quick = measure of time Fast = measure of speed Quick is appropriate for things like reaction time and acceleration. Fast is about top speed. They are never interchangeable. The only way you could "learn fast" would be to study in a racecar or airplane with the throttle pinned.
