Rather than being a joke, this quick and easy white fruitcake recipe will be a winner! Filled with dried fruit and nuts, it's surprisingly delicious!

INGREDIENTS
- 16 tbsp unsalted butter, room temperature
- 3/4 cup white granulated sugar
- 3/4 cup sour cream
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 4 large eggs
- 1 tbsp orange zest
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp kosher salt
- 1 1/2 cups diced dried fruit mix
- 1 cup toasted, chopped walnuts
- bourbon (optional)
INSTRUCTIONS
- Preheat the oven to 350℉. Grease two 8 1/2 x 4 1/2 loaf pans and set them aside.
- In the bowl of a stand mixer, combine the butter and sugar. Mix until it is light and fluffy, 3-5 minutes. Add the sour cream and mix. With the mixer running on medium-low, add the eggs one at a time, allowing them to incorporate. The batter will look broken. Mix in the orange zest, vanilla extract, and almond extract.
- \Add the flour, baking powder, and kosher salt. Mix until there are no streaks of flour remaining. Pour in the dried diced fruit and toasted chopped walnuts. Fold to evenly combine and divide the batter between the prepared loaf pans. Bake in the preheated 350°F oven until they are domed. The edges will be golden brown, and a skewer inserted in the middle will be clean, 50-60 minutes.
- Once baked, remove from the oven and cool. Optionally, if brushing with liqueur, brush each loaf with 3 tbsp. The loaves can be brushed one to two times per week for up to four weeks. If using no liqueur, allow the bread to cool for 15 minutes before slicing.

Hey everyone, I found a Yuletide Cheer Fruit Blend on King Arthur's website. It does not have the dried pineapple but has the peels. There is also a fruitcake fruit blend and a baker's fruit blend. The Yuletide blend is also on sale right now.

I’ve always soaked my dried fruits in liquor for a few weeks before I make it. They have such flavor that way.

My mother made delicious fruit cake, only raisins for the fruit and a full bottle of lemon extract. It also called for a full pound of butter. She baked it in a bundt like pan but it was a square. When she pulled it from the oven that butter was a couple of inches of melted goodness on top. As the cake cooled the butter seeped into the cake. So scrumptious.

I am one of those "strange" people who love a good fruitcake. Living in the South (N.Atlanta) my go to has always been Claxton fruitcakes (as they are a sorta local product). This new-to-me white fruitcake is a game changer !!! and I love the fact you 'booze it up' ... a great way to add huge flavor to a cake or loaf. Thanks for sharing this recipe and inspiring us to bake outside the box. What a wonderful gift you have given us, and give us all year long !!! Oh my goodness, once again you read my mind. My beloved Mother inlaw made a white fruitcake, no citron, no liquor, just red and green cherries, candied pineapple and walnuts. She would make about four loaves each year, and you knew she loved you when you were worthy of a slice of fruitcake. It was labor intensive to dice all the fruit and nuts, and of course it took awhile to bake. Neither I or her daughters seem to know the recipe. This year Ive been on the lookout for a recipe that seems to resemble hers. I do remember there was OJ, which was likely for moisture.

My Aunt used to make friit cake with real dried fruit plus dates, walnuts, pecans, figs and raisins. She would, yes, use a small portion molasses and cardamon. She saturated cheese cloth with brandy then wrapped the fruit cake with the brandy cheese cloth. It took weeks to cure.

I just admire all your presentations. I’m a new and instant fan. I’ve also loved the traditional fruitcake for many years. I’m quite excited to make this one. Years ago I had a recipe for a white fruitcake......I never made it, always meant to then lost the recipe in a move. Will definitely give this one a try. It looks wonderful.

Hey, dark fruit cake is not gross, it is what some of us call the BEST....just hard to give you grief😂😂😂😂. Caribbean folks fruit cake is DARK and very BOOZY....😅😅😅. Merry Christmas Kaleb. Your recipes are always so versatile. ❤

Traditional English fruit cake…… I’m English and my dad “fed” the cake (more than 2 spoons once a week) so much my mum had to drain it to get it out of the tin then dry it with a tea towel before she could marzipan it!!! Liqueur in cake form!!!

There are a variety of fruit cakes, and this white fruit cake is just one of them. Don’t make fun of the other fruitcakes. They are all good. I like the dark fruit cakes, too. Christmas is fruitcake time!

Caleb I can't tell you the craziness I go through making fruitcake for my older aunts using their recipe! They're too old to make it anymore but they love it. I want to try this but not sure they will like the modern version, their's has the iridescent cherries, 3 pieces of parchment folded a certain way then a piece of foil folded this way topped with a rubber band and then steamed. Anyway, I went to your website and love how you show every step on this recipe, but I couldn't find your source for the Yuletide Mix, and there is no link on your FAQ's to it. Could you tell me where you source it? Thank you, I'll give this a try as I've tried many other recipes of yours!

Depends on how much. You can usually substitute liquor for vanilla or almond flavorings in the same quantity for the recipe. That changes the whole flavor, of course. If you just add a slosh to the batter, it won't bake the same way. It'll be too wet. If there is a liquid ingredient, you can experiment (and it will be trial and error) with substituting part liquor for part of the liquid. Basting a baked cake with alcohol over several weeks works because you're replacing moisture in something that tends to dry out anyway.
