YUMMY CRISPY CAULIFLOWER
Preparation Time: 15 min.
Cooking time: 20-22min.
Serving: 6-8 people
Ingredients:
1. Large size cauliflower 1pc.
2. Flour 1 cup
3. Cornstarch ½ cup
4. Baking powder 1 tsp.
5. Coriander powder 1 Tbsp
6. Turmeric powder ½ tsp.
7. Cumin powder ½ Tbsp
8. Garlic powder/paste 1 tsp.
9. Ginger paste 1 tsp.
10. Nigella seeds (kalo jeera) ½ tsp
11. Chopped green chilies.
12. Chopped coriander leaves. 2 Tbsp.
13. Chaat masala 1 Tbsp
14. Salt ½ tsp
15. Water 1 cup+
16. Oil for deep frying.
For the Chutney
17. Tamarind 1 cup (approx.).
18. Sugar 2 Tbsp
19. Red chili flakes ½ tsp (or to taste)
20. Roasted cumin powder 1 Tbsp.
21. Coriander powder 1 tsp.
22. Rocksalt ½ Tbsp+.
23. Salt according to taste.
24. Water as required.
Procedure:
25. Cut the cauliflower into medium-sized pieces. Wash and pat dry with a paper towel.
26. Sift flour, cornstarch, and baking powder. Please put them in a bowl.
27. Add the spices. Slowly add 1 cup of water. If needed add more. The consistency would not be too thick or thin. The amount of water may vary to get the right consistency.
28. Beat nicely to make it airy.
29. Add 1 tsp of oil with it. It will help to reduce the amount of soaking of oil while frying.
30. Heat oil. Dip the cauliflower pieces into the batter. Coat nicely. Fry them on medium to medium-low heat until cooked and crisp. It may take 6-7 min to fry.
31. Sprinkle some rock salt on top of the cauliflower. Do not skip this. It will amazingly enhance the taste. It will remain crisp for a long time.
32. Let’s make chutney. Soak the tamarind in water for 30 min.
33. Then squeeze out the pulp and strain it in a strainer.
34. Add the spices, sugar, and salt. Mix well. You can adjust everything according to your taste. The tamarind I used was too sour, so I added a lot of sugar.
35. Also, it can be kept in the refrigerator for up to 1 month.
36. This chutney goes well with any pakora, chop, or samosas.
