This recipe is extremely easy to make. Simple and healthy with no added oil. Mackerel fish is not only very tasty it is also a very nutrient-dense food.
Mackerel is a rich source of omega-3 fatty acids (which almost no one get enough of) and often listed in top 10 Omega-3 Rich Foods, contains significant amounts of Vitamin B12, excellent source of Selenium.
One regular mackerel fillet provides more than 100% of the recommended dietary intake for vitamin D (Supports immune system).
It’s a great carb-free lunch/dinner option!
🛒Ingredients:
* Mackerel - 1 whole (mine was 1 lbs/440g)
* Salt to taste
* Black Pepper, fresh herbs of your choice (I used parsley and dill, dry herbs will work too) and small bay leaf - all optional
🗒️Detailed recipe:
1. Preheat the oven at 425F (220C)
2. Rinse the fish well, pat dry with paper towel
3. Rub fish all over with salt and pepper mixture, put bay leaf inside and chosen fresh herbs.
4. Line oven tray and cover fish loosely with aluminum foil (I poke 4 holes in it)
5. Put in the oven for 23-24 mins (last 3-4 mins remove the foil)
6. Discard the bay leaf (if using). Serve&Enjoy!
