राजस्थानी कांजी वडा बनाने का तरीका | Rajasthani Kanji Vada Recipe by Kunal Kapur | Curries Of India
This is a marwari delicacy of moong dal vadas immersed in tangy mustard flavoured liquid. The "kanji' or 'rai ka pani' as it is known needs to be prepared a day in advance so that all the flavours mellow down. The vadas are added the following day. Kanji vadas are a popular snack sold on the streets throughout Rajasthan. Chukandar (beetroot) kanji is also popular and is specially prepared for the festival of Holi.
Kanji: 500ml water, 1 tsp salt, 1/2 tsp red chilli powder, pinch of turmeric, 1 tsp black salt,2 tsp mustard powder, 1/2 tsp black pepper powder, pinch of asafoetida, keep it foe 3 days
Vada : Oil to fry,2 cup soaked husked split green gram,1 green chilli,2 inch ginger,pinch of salt,1/2 tsp fennel seeds
