Restaurent style Veg kurma/ easy to make recipe with veggies and spices added with some cream and nut paste. Veg kurma can serve with roti or naan.
Ingredients-
Vegetables-
Paneer 50 gms
cauliflowder- 3 tbsp, carrot 2 tbsp, beans- 2 tbsp,potato- 1,1/2 capsicum, green peas- 3 tbsp
2 onoions and 2 tomatoes- chopped
10 cashewnuts and 1 tsp poppyseeds
For tampering-
2 green chillis, few curry leaves, 1 sp cumin seeds, 2 bay leaves, 1 black cardamon and 1 inch cinamon stick and 2 pinch asafetida
2 tsp garlic ginger paste
1 tsp turmeric , 2 tsp red chilli , 1 tsp cumin,corinder and garam masala powder
2 tsp dry fenugreek leaves
Corinder leaves
Ghee
2 tbsp fresh cream
Oil
Salt
Method-
Soak cashew nuts in water for 15 mins. after 25 mins, add grind cashew and poppy seeds by adding some water and make paste of it.
In a pan heat 3 tbsp oil and 2 sp ghee, give tempering of whole spices, green chillis, curry leaves, cumin seeds and asafetida. Then add chopped onions and fry till it becomes translucent. Then add tomatoes and cook till it becomes soft.add ginger garlic paste. Saute. add all veggies accept paneer. Mix . add salt and cover with lid and cook on low flame for 10 mins.add all masalas and some water and cook for 5 mins more.in another pan fry panner. After 5 mins add paneer , cashew nut paste , fresh cream and crush fenugreek leaves/ kasuri methi. Cook for more 5 mins and garnish with coriender and serve with roti or nan.
