Rabri

Ingredients:
• Milk: 1 litre (दूध)
• Sugar: to taste (चीनी)
For Garnish:
• Almonds: finely chopped (बादाम)
• Pistachios: finely chopped (पिस्ता)
Directions:
1. Prepare the Milk:
o In a large, heavy-bottomed saucepan, add the milk and bring it to a boil.
o Once boiling, reduce the heat to low-medium and simmer for about 45 minutes.
o Keep stirring occasionally to prevent the milk from burning at the bottom. As a layer of cream (malai) forms on top, push it to the sides of the pan and continue stirring.
2. Reduce the Milk:
o Continue this process until the milk quantity reduces to half. This will help thicken the milk and enhance the flavor.
3. Add Bread:
o Remove the crusts from white bread slices and crumble the bread into the reduced milk mixture.
o Mix well and continue to cook on low-medium flame for another 10-15 minutes. The bread helps in thickening the rabri.
4. Flavoring:
o Add 2 drops of kewra or rose water for a fragrant aroma.
o Mix well and turn off the heat.
o Add sugar according to your taste and stir until it completely dissolves.
5. Garnish and Serve:
o Transfer the rabri to a serving dish.
o Garnish with finely chopped almonds and pistachios.
o Serve warm or chilled.
