Ragda Pattice is popular street snack served on the roadside of India. Its filled with such wholesome flavors and topped off with a sweet and tangy chutneys and the crunch of some sev. It’s savory potato pattie that’s been drowned in ragda, a spicy gravy with white peas and abundant of spices. This is one snack that is absolutely mouth-watering and satisfies your cravings.
ingredients
for ragdap
soak dried white peas
coriander leaves
chopped ginger
haldi powder
cumin powder
coriander powder
salt
hing powder
water
for patties
boiled potatoes
coriander leaves
cumin powder
chopped green chilli
corn flour
garama masala
salt
ghee
for serving
Ragda
chopped onion
chopped tomato
imli chutney
green chutney
khajur chutney
cumin powder
red chilli powder
salt
red chilli powder
sev
chaat masala
coriander leaves
kairi
chana dal patties
For Ragda
soak peas in water overnight or 7 -8 hours
Put soaked peas in kadhai add water, turmeric powder, cumin powder, coriander powder, hing powder, badisof powder, salt cook until peas turn soft.
Once peas are cooked add chopped ginger & coriander mash them a bit
For pattice
take mashed potatoes into a bowl. To that add all dry spices mentioned in the ingredients list.
Mix well and divide it into equal size patties.
Grease skillet with oil and shallow fry potato patties until they get nice browning from both the sides.
For serving
Take one of the pattie in the serving dish, pour ragda on the top of it.
Add onion, tomato, kairi, tamarind chutney, green chutney, khajur chutney , chat masala, cumin powder, red chilli powder, salt, chana dal, sev and coriander leaves.
Serve to steam hot!
NOTES
Adjust the spices to your taste
poha gives nice binding and patties become nice
you can add corn flour or rice flour
while cooking potatoes for any patties, burger Or cutlet do not overcooked then these will release the moisture
