What is the sponge and dough method?
Sponge and dough is a breadmaking method that involves two stages:
STAGE 1 : A pre-fermentation step for sponge mixing
STAGE 2: A dough or final mixing step.
The Sponge and Dough method produces dough breads with unique flavor and aroma, a soft crumb and an improved shelf-life that can last for a week, still soft and won't get spoiled.
The bread product I produced in this video is a very healthy Raisin Delight, fully, soft and flavorful with the use of my SaladMaster Baking pan.
