KASHMIRI RAJMA
Preparation time 10 minutes
Cooking time 30-35 minutes
Serve 2-4
Ingredients
For Cooking Rajma
3 ⅔ cups Kidney beans, soaked, राजमा
2 no. Black cardamom, बड़ी इलायची
¼ tsp Dry fenugreek seeds, मेथी दाना
Water as required, पानी
2 Bay leaf, तेजपत्ता
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
For Ginger Garlic paste
2-3 no. Green chillies, हरी मिर्च
1 inch Ginger, peeled, अदरक
4-5 Garlic cloves, लहसुन
For Tempering
2 tbsp Mustard oil, सरसों का तेल
2 Bay leafs, तेजपत्ता
1 tsp Cumin seeds, जीरा
3 medium Onions, finely chopped, प्याज
Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट
Little water, पानी
A pinch of asafoetida, हींग
2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Coriander powder, धनिया पाउडर
Little water, पानी
½ cup fresh Tomato puree, ताज़े टमाटर की प्यूरी
2 tbsp Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
Remaining Rajma Water, बचा हुआ राजमा का पानी
Boiled Kidney beans, उबले हुए राजमा
Salt to taste, नमक स्वादअनुसार
1 tbsp Ghee, घी
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Cooking Rajma
In a pressure cooker, add kidney beans, black cardamom, dry fenugreek seeds, water as required, bay leaf, water as required and salt to taste.
Cover it with the lid and cook it for 3-4 whistles.
For Ginger Garlic paste
In a mortar pestle, add garlic cloves, green chilies, ginger and make a coarse paste.
Keep it aside for further use.
For Tempering
In a handi or kadai, add mustard oil, once it's hot, add bay leaf, cumin seeds, onions and saute it for a minute.
Add prepared ginger garlic paste and cook it for a minute.
Add little water, a pinch of asafoetida, degi red chili powder, turmeric powder, coriander powder and saute it well.
Add tomato puree, curd, salt to taste and cook it well.
Add remaining rajma water, boiled kidney beans, salt to taste and cook for a while.
Finish it with ghee and transfer it to a serving bowl.
Garnish it with coriander sprig and serve hot with rice.

I am environment conservationist and recently turned farmer in Pune.I watched this video and asked my friend to send Rajma from Jammu. I got Bhaderwah and Marwah variety today. Will be sowing it this winter. Feels so great that you give lot of information along with the recipes. Thank you ❤

My dads family is from Jammu. I have childhood memories of eating kadoo and karam ki sabzi from Jammu. And not to forget khatte ladoo we would eat while going to Jammu on our way .

Nice to read and I love Ranveer Paaji but this is. It authentic j&k rajma recipe….No whole masala are used in rajma in this region..Also no one uses ginger in it…He has just taken rajma from jammu region might be badharwa…My family belongs to Jammu and my mother in law is from Kashmir..I will be posted authentic rajma recipe on my channel in 1-2 days pls check for urself and decide… Finally all the best to Ranveer Paaji…

I had this Jammu style Rajma Chawal with a cup full of ghee, while travelling from Katra to Pahalgam, in a roadside dhaba back in 2005. 18 years later I can still remember that taste. My mother tried to create that recipe multiple times later, but never got that original taste. I would try this recipe to see whether its the one that I am looking for.

Last Jan I had dinner at this (driver’s suggestion) place while I was returning from Srinagar to Jammu. Wo garam garam rajma chawal with Anardane ki chutney aur upar se desi ghee it’s a combination made in heaven. Thank you Chef!

Could Dogras refrain from centering everything around their own culture, similar to how Kashmiris often do? There are non-Dogra regions within the Jammu region that share the same cuisine.

Whenever I come back from Jammu to Mumbai I always bring Bhaderwahi Rajma and Samroli's Kaladi and this ends up being my every Sunday meal. Kudos to chef for appreciating the much famous Pedah Rajma chawal.

You’ll be surprised with how little veg options those cuisines have. You can substitute the main protein in your dish but a lot of them require sauces or broths or paste made out of animal products. That is just how it is, they don’t have a lot of vegetables growing there so there food is dependent on animal ingredients. Also, ketchup does not go into kimchi. Ever

@@himalayannomads3986 peerah is a place in Ramban district of jammu ...about 150km roughly ...it is famous for it's rajma chawal...(rajma chawal ...ghee and anardana chutney ) ...bhaderwah is the place where Cultivation of rajma happens ...

@@himalayannomads3986 now there are Chinese rajma too in market ...mimicking bhaderwahi rajma ...only difference is in Chinese rajma all rajma beans will be dark red and of same size ...but in bhaderwahi you will not get all rajma beans of same size or colour...

I am from jammu and absolutely correct. These are the best!! I’ve been in most of India but none taste like my jammu ke rajma (Bhadrwah ke rajma) kudos to the team for the research!!! So so proud of u ❤❤❤❤❤

Sach mein yeh recipe kamaal ki hai chef. Rajma hamesha se banate aaye hai ghar pe par yeh version khane ke baad jammu ke rajma ke fan ho gaye hai hum sab. Thanks for sharing this recipe chef.

Sirjee bura mat maniye par bahot dil se ek feedback de rahi hun q ki maine yeh cheez bahot bahot logon se suni aur mujhe bhi yeh lagta hai ki iss baar sab judges Aruna ji ko leke kuch jyada hi favouritism dikha rahe ho. Acche deserving log out hogaye! Arunaji bhi acchi hai par harr baar unke prati kuch jyada hi accha bante hi aap sab! I’m a bit disappointed with this time’s MC India 🥲🥲
