An extremely important point that almost all Roshogolla videos (including this) misses out on, is what to do when the dough (chana + maida + sugar makha) is stiky even after kneading for 30 mins. Should one add more maida ? Or should one leave the dough in the fridge for sometime ? Or just keep kneading ? I hope I was not the only one who faced this problem. I ended up adding more flour till the dough was suitable to make balls. Ended up with inedible Roshogollas.

Yes you are right, but need not to add more maida to it, then u will get hard rosogollas, just knead for 10 min or so. If it is sticky dough then grease ur palm with some ghee, and make balls. And same process, stickyness depends on quality of milk. And it's fine.. still you'll get soft rosogollas.
