Happy 4th weekend! You know we love checking out the latest trends, so we had to give this Raspberry Greek Yogurt Cake a try. Enjoy!
Note: It is not super sweet so if you want to sweeten it up, add a 1/2 cup of agave.
Raspberry Greek Yogurt Cake
Ingredients:
6 eggs
1 tsp cinnamon
1 tsp Bourbon Vanilla from ‪@traderjoes‬
5 tbsp corn starch
2.5 c low fat Greek yogurt
1 c raspberries
1 tbsp lemon curd
Preheat oven to 350 degrees. In a large bowl, add eggs, Bourbon Vanilla and cinnamon. Whisk together. Add in corn starch and whisk until smooth. Fold in the Greek yogurt and the raspberries. Pour in to a cake pan sprayed with non-stick cooking oil. Drizzle lemon curd over the top and using spoon, slightly push down into batter. Bake for approximately an hour until golden brown on the outside. Check and turn 1/2 way through.
