Speaking of the fritters, my mom was from southeastern Kentucky, she made what we called mustard cakes. Basically, chopped mustard greens mixed in a simple batter, and fried. We always grew lots of greens, so we ate them from our early garden, till our late garden…very often. They are delicious on their own, but, terrific with pinto beans.

Yummy!!! here in Puerto Rico we eat lot of those "vegetables" or "root vegetables" We eat "guineos verdes sancochados" (green boiled bananas), "plátano verde y maduro sancochados" (green and yellow boiled plantains), and lot of "yuca", "yautía", "malanga", "batata" (different tipes of yam), and of course the "pana sancochada" (boiled breadfruit) We usually accompany this dish of "verduras sancochadas" (boiled root vegetables) with any type of meat but we especially love it with "ensalada de bacalao" (Codfish salad) 😋🤤🤗

Matthew, this kinda reminds me of our national dish which is called *Oil Down* - callaloo, breadfruit, green bananas, plantain, carrots, dumplings, salted beef or other meat (optional) all slow-cooked for about an hour in coconut milk seasoned with turmeric, bell pepper, chive, thyme, and some curry. You should really look into it and cook it.
