Thank you for highlighting Erica. I am planning my vacation to travel to several cities that have a plethora of Vegan restaurants. This year makes 31 years Vegan for me! I am a Vegan Chef also, but I enjoy eating REAL Vegan food in other cities. I am intentionally planning to visit Erica as soon as next month. I will be sure to come back and share my experience. Majani's and Soul Vege are my two favorite vegan spots in Chicago. We don't have to compromise flavor or satisfaction. Support your local vegetarian restaurants even if you prepare most meals at home. I promise you. When my daughter visits me from Atlanta, those are her 2 go to spots!

You are an EXCELLENT interviewer. So engaging and you really listen. Many times when I'm watching an interview, there will be things said that I'd love to hear more about but often times it goes over the interviewers head. I was so happy when you asked her...why would the convenient store owner offer her to put a food cart at his store on the whim. That is something I was curious about after she said it. LOVE your energy as well as Erica's. I hope I get to taste her food one day!!! You reaction alone sold me. Many blessings!!!

Whoa! Her food looks so good! About 10 yrs ago I went to a vegan restaurant near Howard University close to my home in Washington, DC. mac & cheese, vegan chicken salad I believe, collard greens and it was good. Well, I don't know what it is, form of soy by product? But I got sick with lots of phlegm in my chest, build up of saliva in my mouth, burping every few seconds with pain in my upper chest area and all ends with nausea, throwing up. Only thing I can think is the issue is some type of soy by product because I was using soy milk enable to eat cereal for several years. Then started feeling slightly sick on my stomach 🤢 Then I switched to almond milk with no issue. Then once in a while, would get the same sickness from store bought foods, like the Banquet spaghetti & meat balls , frozen eggs rolls and few other items I had eaten in the past. Most foods have some type of soy and I they don't bother me. I use soy sauce on top of that. So, I don't know. 😕
