Now, that good home economics! Growing up poor does seem to have its advantages nowadays, and I grew up poor and 1/4 Greek! Both of my parents came from families with 7 children, so knowing how to cook economical, nutritious meals was a must. A lot of my dishes come from my Greek "Papoose" - Grandfather, who was a wonderful cook, and that came in handy during the Depression. Marinade chicken pieces in olive oil, fresh lemon juice , and minced garlic, and sprinkle in some oregano, red pepper flakes, a teaspoon of ground cumin. Put the chicken in a shallow pan with cut up potatoes, pour on the marinade and coat everything well, salt and pepper, and roast until everything is golden and browned - Amazing! Serve with a salad with olives and feta cheese. Did you know you can easily make your own feta cheese - enough to last for months! And Ricotta - That's the easiest. Today I'm making ravioli from scratch - I made fresh ricotta yesterday with a gallon of milk, and today I'll make the pasta and put together enough raviolis for tonight's dinner, and plenty to freeze for four or five future meals. You'd be surprised just how easy and economical it can be!

Glenda my dad used to fry a slice of bologna in an iron fry pan. And when the sides lifted up and made a little bowl then he would fill it with warm baked beans. We just loved that. God Bless.

Glenda, this looks delicious! Even before my hubby and I were on Soc. Sec. we'd eat whatever we had in our fridge. On cold days I'd cut up veggies that were about to start withering & make a type of soup. Then I'd cut any extraveggies & freeze them and have them ready to pour into boiling water and make a soup on another day. It's all GOOD!😛👅😋👏👏👏 Im going to try this with a slab of bacon i have in the freezer. Lets see how it turns out.

Nice to see you cooking Glenda. I take bologna and fry it all up and freeze it. Then use for grilled cheese sandwiches or make club sandwiches with it. You just thaw it out in the mic for a few secs. Just needs to be at room temperature. My favorite fried bologna with tomatoes and cheese with a fried egg

I've never thought of roasting bologna w veggies in the oven before. I just pan sear me some every once in awhile or cut it up and fry it up mixed with eggs. Then eat it with grits or buttered rice and couple slices of toast. Have a great rest of your Saturday my friend.☺️💖

Such a clever way to use up lunch meat before it expires. When balogna is cooked nice and crispy, it almost tastes like 🥓 bacon to me. I have always enjoyed a well fried balogna sandwich on white bread - sometimes with mustard and sometimes without. Deeeeeelicious‼️

Nothing like a one pot or one pan meal. I do mine with red potatoes skin on cut up with onions garlic & cabbage or brocolli on the stove with a little water untill potatoes are almost done. Add a good smoked sausage at the last 30 minutes. The smoked flavor goes through & flavors everything. I cook enough to have a 2nd or 3rd lefovers. Boars head is a great product and better for you! That meal looks delicious & nutritious Miss Glenda. I believe that bologna is called Devon here in Australia. I am not overly fond of it however it is low priced & very popular. I remember eating Devon & tomato sauce sandwiches on fresh white bread when I was a little girl. I loved them. Roasted veggies are the best. Tonight we are having roast pumpkin, potato, sweet potato, onion, yellow & green capsicum (I think you call them peppers) & mushrooms. I know sometimes it's a challenge mixing up veggies in a bowl with all those great veggies...next time, try using a ziptop bag and add everything into the bag then season, add oil, toss around, and voila, it's all seasoned, ready for the pan and oven😉👍🏻

@@glendasully I blanch the kale stalks for 3 minutes before stir frying it with the rest of the kale. If I'm boiling the kale I don't bother to separate the stalks, I just cut it up . I clean, chop up and roast the broccoli stems, it's delicious. If I'm making a stew and have broccoli in the fridge/veg basket I'll cut off the stalk and puree it then use it with the stock I'm adding to the stew, it's a great thickener and it adds flavour. The cauliflower leaves I clean and roast too or use them in a stew too to bulk it out. They really help to bulk out the dish, making it go further. I need to be thrifty and I like a big dinner 😋😄 also it cuts down on food waste.☘️☘️

I love my bologna fried so it gets quite crispy.There have been times that I bought a roll of bologna and slice it as thick as I want.When grilling hot dogs I like them rather dark(burned) as many say.Your take on this meal sounds good to me.Cooking for one can be a challenge at times.When I would cook every Sunday my grands and 2 grown children would come over.Time went by and it became too hard and I went out on disability.I so wanted to work a little longer but my knee thought otherwise.We just keep on going my friend and accept life as it comes our way.There are so many blessings I receive each day makes me know how good my life can truely be.We have our moments but we somehow help one another to be strong as we navigate life.Thank you for being truthful and uplifting on your videos.I sure do enjoy each and everyone I watch.God bless you and your family.

Hello there! What time do you ive? Sttill confused about the time differance. Can not get it in my system somehow 🙃🙂. Here it is 10.55 pm. Hope all is going wel. You are very talented. Also very smart with making meals out ot left over vestibles and all. I,m ashamed sometimes about what i trough away on food. It,s no good. But i,m learning. Hi Glenda. That looks good. I love fried bologna. There is a sandwich place here that has a fried bologna sandwich to die for. I always thought fried bologna was a Pittsburgh thing, but apparently I claimed ownership prematurely, LOL. I am finding out people all over enjoy it. Glad to see you are getting better every day. The sandwich place is Primanti Brothers. The Fried Jumbo Bologna and Cheese sandwich is so good.

Those veggies look so delish. I enjoy cooking with you. I can’t believe those stupid questions . You can buy any brand you want. If you tell them how many slices you need it can be affordable. I also live alone and buy things this way so I don’t waste but I like veggies never liked meat and I can buy 1 or 2 of fruits or whatever but if some idiot said something about my brand I would get real unhappy. We worked paid in SS so don’t tell me what to buy with my money.
