Why do tutorials like to make a copy of the object before doing anything to it? For backup purpose or is it going to affect the result?

Possible, but you have to use Blend. The 2nd behind path having 0 opacity

I use smart object to be able to change the text while keeping the effect

Of course, but to do this long shadow effect u need to use multiple drop shadows, which makes this way that i did here easier and more flexible
