These beignets are very easy to make and will be appreciated by young and old alike.
Ingredients:
- 400g courgettes
- 1 small onion or half of a normal onion
- A few sprigs of parsley
- Salt and pepper
- 2 tablespoons of olive oil
- 2 eggs
- 20 cl of milk
- 70 g of flour
- 70 g of cornstarch
- 1 teaspoon of baking powder
- 50 gr of grated mozzarella
- frying oil
