The "maybe chefs" (since you don't want to use "normals") should do a ultimate battle where they have to use knife skills (etc) and prepare the mise en place (the the chefs standards)

Given the popularity of ‘gourmet makes’ - this book should be your guys version. I propose the whole series is called ‘Mike Makes’ and he (alone) uses the book to recreate iconic meals such as the Big Mac.

It's pretty much dead on, except I think the sauce's emulsion started to break, and the chives leeched their color into the sauce because you put it back on the burner, but otherwise great execution. I've eaten at the french laundry so many times that I have a pretty good feeling of their off days haha

My dad was a line cook for 15 years and when Mike went to pick up the dish, but it was too hot... then Ben just picked it up and plated it, it made me laugh. Every time I go to pick something up and it's too hot, my dad immediately picks it up cause he has no feeling in his hands any more...

It's been my experience that the feeling of burning is still there but I don't have time to give a shit. It's more about not caring about the burn. Maybe it's just me. Dunno.

@@SybilHolidayHolidayOHara We called it 'Cast Iron Fingers'. :) I miss mine (retired from cheffing about 15 yrs ago). I still can handle hotter plates/dishes than most people, but back in the day I could practically grab stuff right out of the oven if I was quick.

This is one of the most touching episodes ever. Mike and Ben both seemed they enjoyed making this, Barry and Jamie are hilarious as always, there were some parts that actually made me feel all warm inside, the "you are not normals" anymore will stay with me for a long time. Also congrats Mike.

That is pretty common among my friends. They had to learn all of that stuff (like French knife cuts) in culinary school but they don't do it as a day to day thing. Learning how to do a puree/sieving it through a couple graduated tamis is part of any course but I don't know anyone that has done it in years. (Unless you are working in fine dining or an old school French place.)

I like seeing Ben cook with the others. He always tries to be positive and helpful teaching the others and judging their food. Even when he's doing a chef vs chef, he has no problem losing and congratulating to the winner. All this even when they tease him. I'd love to have a teacher like him when I decide to go to school! Love all guys and love the show!

Yeah, it’s definitely more “professional chef vs amateur chef” these days. Which is totally fine! But it would be fun if they did a series where they thew a “real” normal in the mix. Like, chef - “normal” - random member of the production crew in a competition.

This is my favourite video of yours (of the ones that I can remember recently at least)! I have had this dish at Per Se and loved it, and I find chefs like Keller really interesting. Plus the idea of the book is so great. And I loved how you surprised Ben with the task. And I love the combo of Mike and Ben cooking together. Probably my favourite pairing. So sweet when Mike was checking in with Ben to see if he was enjoying it. And I LOL'd several times - snacking tapioca/snackioca! And the whole adorable chive chopping thing. And finally, I love it when Ben actually gets to cook (even if it wasn't the style of cooking he likes).

I just wanted to add that with all the accolades of this dish, and how it's become an iconic dish of the two restaurants, Chef Keller admitted in an interview that he had never personally tried the dish (not sure if that is still the case these days). When the interviewer was surprised and asked him about it, Keller said he doesn't need to taste it to know that it works.

Watching Ben realize that the instructions weren't in order and then have a small meltdown as he flips back and forth to try to reassemble the dish in chronological order was just the best. His face was priceless, but I don't believe Ben was motivated by ego, I think he's a perfectionist who struggles to put up with second best at times. I think using Mike's chives was a triumph of will over ego in the end. Even if Mike hated it hahaha

I don’t think it was about ego. I took it more as Ben providing a teaching moment. Mike had just bragged about how small he could cut them. Ben showed him that there was still more he could do and learn in an area where Mike thought he had peaked

I tried this dish at per se (about a month ago). Hands down 1 of the best caviar dishes I’ve ever had. Eating Thomas Keller’s food I can only describe as being given a lecture on how food is supposed to taste. Truly iconic

Seeing the original 4 here and being able to appreciate how far all of you have come in a *decade* was amazing!! (Was Jamie trying to return to ye olde days??) Really fun episode, Ben was absolutely right, you guys aren't normals, Mike and Barry are at a different level while Jamie is and has always been an instrument of chaos. Happy 10 years Sorted!!!! Here's to 10 years more!

This is one of my favorite, if not the favorite, videos you guys have made. Mike & Ben working together shows much more of the chemistry that makes you guys "Mates". Sure Pass it On videos are fun but this type of video is more inspiring. More please!!!

I had it 3 years ago at his restaurant ‘The French Laundry’ and absolutely loved it. Yours looked pretty close to what I remember mine looking like.

Late reply, but I also had it at "The French Laundry" in 2010. I don't think it was served on 4 dishes stacked on top of each other, but the dish itself *looks* pretty much identical! What I remember most about the meal was how each dish built on the one before and actually took you on a journey. Longest, and most intellectually challenging meal I've ever had! Oh, another incredible thing about French Laundry was the absolute wraith like quality of the waiters, I remember finding my water glass filled and not having seen anyone fill it! Absolutely terrifying (in a good way).

Please bring this book and this calibre of recipe back. I realize the average viewer won't make it, but it's great seeing Ben get to flex his skills and seeing Mike actually contribute is extremely impressive.

I can't be the only one who really wants to see them make the big mac (Side note: Totally agree with Ben's comment that the boys can't really be called "normals" anymore, they've definitely become much more skilled than the average person over the years they've been doing this.)

Love how the boys actually care about each other...it does come through all the leg-pulling.. Mike checking if Ben was having fun after he was hesitant at the beginning, to Ben applauding and cheering Mike's knife skills..to Ben immediately telling Mike not to touch the hot bowl and doing it himself...just lovely! Just cooking at home for 10 odd years have build my tolerance of heat in my hands.. imagine how a chef's hands would be!
