We challenged resident Bon Appétit super taster Chris Morocco to recreate Madhur Jaffrey's chicken tikka masala recipe using every sense he has other than sight. Was he up to the challenge? As a bonus, we're joined by the legend herself, Madhur, to review Chris's reverse engineered dish.

Have you ever been to one of those restaurants where there's absolutely no light? There's a chain called 'Dark Table Restaurant', the restaurant is completely pitch black and visually impaired servers guide you through your meal. I went to one a few months ago, and I chose the 'surprise me' menu option. I could not tell, at all, what I was eating. I couldn't identify the meat, the vegetables, the wine or the dessert. Since that experience, I am humbled and also incredibly impressed with what Chris does.

I find it interesting that Madhur’s voice sounds almost identical to my paternal grandmother’s...who wasn’t remotely Indian...well...at least not the same definition of the word. She was a lifelong Mainer with a strong Acadian/Irish/Scottish background. She died a few years back so I’m glad I got the reminder! Her cooking however...left a wee bit to be desired. My dad would complain about how everything was either boiled or shoe leather growing up.
