Hey guys! I'm back as a chef. Hahaha. I 'attempted' to make the classic Filipino breakfast Tapsilog. Because I only had limited kind of ingredients, I would not call my tapsilog authentic, rather, a 'korean-ized' tapsilog. Hope you enjoy the video! :)

I'm 50 year old Korean but I have a Filipino wife. She wanted to make kimchi so badly. So, she did it! My mom who is an 81 year old korean great-grandmother was so impressed that she has asked my wife to make another batch. My mom doesn't make kimchi anymore because she is pretty advanced in years. However, she prefers my Filipino wife's kimchi instead of going to the store to buy it. But surprisingly, my wife made kimchi for all her Filipino friends and they love it.

Our version of beef tapa in our province is quite different .. we don't use soy sauce and sugar .. we marinade the thin beef slices in garlic, some vinegar (the sourness of the vinegar would depend on your preference), crushed black peppercorns and salt to taste .. no sugar added. It is so delicious in the morning matched with any kind of egg .. be it scrambled or sunny side up egg and sinangag or garlic rice.

@aianl4564

No.. not strain... cook it the filipino way. wash rice. Once washed and drained, stick your index finger on the rice and measure the height of rice. Then place your index finger on the surface of the rice and pour water up to the line of what you have measured (pretty like double the volume of the measured rice) then cook it. better use a rice cooker so you can leave it until it is done.

You could lessen the water and slightly over cook the rice to have "tutong" the slightly burnt rice at the bottom of the rice cooker. Either 1:1, 1 cup of water, 1 cup of rice (if the rice soaks up too much water) Or 2:3, 3 cups of rice, 2 cups of water (it the rice soaks up less water)

Pinakbet is my favorite Filipino dish and for me bitter melon is a must, the bitterness makes the dish super good and healthy. You can also add red onions and a lil bit of oyster sauce in your tapa. keep your marinade let the tapa simmer in it that way you can lessen your marinate time. Your food looks great and appetizing. Thank you for sharing your version. Mabuhay ka!

love watching your videos. Specially when JeSylMoy are together. I think most Filipino dish incorporates the vegetables in their meat dishes (ex. SInigang, Bulalo, Mechado, Calderata, etc). Because a typical Filipino meal consists only rice and 1 ulam and sometimes a fruit for dessert. That's why we incorporate the meat and vegetables in one dish.

Gotta give kudos for liking our Filipino dishes! I can say most of the Filipino Dishes are meat-heavy but there are dishes that go well with veggies like cabbage, string beans etc. to dishes like Nilaga, Bulalo, Chopsuey, Sinabawan, and many more. You should try cooking those. It is healthy as well especially Linagang Baka where you use lean-meat instead with the ones with a lot of fat.

The authentic filipino beef tapa is consist of salt and pepper and beef meat.. You have to mix it with your hand to lightly squeeze it.. Then put in the wire mesh to hang it in the open to sun dry..for the purpose of preserving the meat. Nowadays, commercialized Beef Tapa are often cured but most do not undergo drying.Tapa is usually fried and is best served with vinegar.

Hi Jessica! I really like your vlog. I’m in vegan diet for 10 years now. At first, it was hard because I loved egg and cheese. I’ve miss tapsilog, tosilog and most Philippine dishes. I’ve tried to veganize some of them. It’s really like the real deal. Salamat, Jessica, for awesome vlog.

Better to use a freshly minced garlic because the fresh minced one will give you more fragrant and add a pinch of salt on the garlic while you fry it then it's optional to remove the excess oil but I would definitely gonna remove it (too much oil causes constapation). An alternative to calamansi are any citric fruit like lemon, lime, and etc.

Finding filipino vegans are rare. You're right that most of the foods that we eat are meat. We probably need to change that.

You can actually cook the beef with the marinated sauce that you've made, simmer until the beef absorbed the sauce then you can add a little oil to fry a little bit.

Filipino food vary from region to region. We do have lots of vegetarian and vegan dishes like vegetables cooked in coconut milk. Here in Eastern Visayas, aside from stir frying, we almost cook any vegetables in coconut milk like squash, pako (a type of edible green fern), kangkong, bamboo shoot, unripe jack fruit, banana blossom, gabi leaves, and even pinakbet with coconut milk. We even have law-ag (boiled veggies) and law-oy Bisaya veggie soup only common in some parts of Leyte and Cebu. Most of the dishes serve in restaurants are meat-based and common dishes. We usually eat veggies that are grown in our backyards.

I'm assuming your Filipino friends are on the more affluent side, that's why their diet is more on meat. Most eat veggie food, especially the working class
