When acting gigs dried up during the pandemic, veteran actor Terence Cao tried his hand at an online food business, Sibay Shiok. Inspired by his mother’s Peranakan recipes, it kicked off with a strong start, serving classic Peranakan dry mee siam.
Now that sales have started to slow, Terence wants to expand his repertoire of recipes and add a new dish to his menu. He takes on the challenge to create his version of a Singaporean favourite - rendang.
With his budding business on the line, he tinkers with different renditions of rendang, while discovering the stories behind this dish served and loved by many.

I'm Minang from Malaysia. Have been testing a lot of Rendang. The most tasteful Rendang I have ever eaten was in Padang, slowly cooked for 8 hours. Its more than the recipe but the ingredients used are very important too. The chili, galangal and lemongrass used were homegrown.

it's called "gudeg" in indonesia when you make a rendang from jackfruit

That's what I thought first, but then I search and there is a type rendang called rendang cubadak from Padang which uses young jackfruit as the meat substitude/addition.. The more you know 😁😁

As a vegetarian, I am grateful for Greendot's Signature Lion Mane Mushroom Rendang. I hope to see more vegetarian options...

The best beef for Rendang will be chuck meat or beef shin or even topside cos they all have some fat in it to make it moist and dont dry up as easy as othehr cut of beef.No one will ever use wagyu beef bcos of its cost and its only use for a grilled steak dish.

Isn’t the kerisik supposed to be pounded to also make it into a paste rather than just throwing it in? You pound it to extract the toasty coconut oil.

yeah you are right, maybe it's just his style of rendang and fer us indonesian the finished dishes looked more like kalio than rendang 😁 btw are you malaysian?

I've never eaten a good rendang made with high grade wagyu. It's like how you don't use wagyu for stews... Not meant to be by my books. Of course here, I'm not using wagyu to refer to the more general meaning of "Japanese beef".

when worked in the kitchen 20y ago i remember this meat as kobe beef. a specific black breed cow from breeder in kobe which is famous in the unique techniques of raising and slaughtering the cow, without doubt it's more tender than US prime but with more marbling than US choice. that's why this beef so famous and breeders all around the world wanted to rise the cow breed with the same way in their own country. and nowadays we call it wagyu as long as the following standards are met. as fer the rendang here, he has the right to choose the meat he want to cook and maybe it suits his style of cooking too.. anyway it's good job fer him people like his rendang as we can see in the video. the more people like it the better, becoz he can make a new trend lol.. but fer me cooking rendang using wagyu is pretty lame

Don't has to be premium meat, just used old kampung style traditional AYAM PENCEN, cook on belanga for 6 to 8 hours slow cooking

Online cooking is not about the taste, its about how it looks, thats why so many youtuber wanna be doin cooking channel, but their recipe is awful.

surprisingly I learn a lot abot Rendang from this video hehehehe, my fave Nasi Padang Rendang but I can't eat too often because its calorie bomb :D

It is ok, as long you don't eat too much rice. But i wonder if someone can eat rendang without a lot of rice and handle the spice.

@Steve Wolcott what's yer point? sorry mate, don't ya know that roses are edible? Lemme tell ya in my country we use a lot of flower or flower petal as ingredients such as kembang turi(vegetable hummingbird), bunga kecombrang(torch ginger flower), etc
