I've been serving for 6 years now... this guy has like no personality... a big no no with costumers... you must be quick.. and precise... talkative... and confident... if you make them laugh and smile... they'll be back for you... for sure!

@@grandadan a cheap place you say, lol, clearly you never been in the touristic service industry before, the lighter ur personality is the better your clients take it, only on rare moments people dont want an energetic or talketive waiter, and thats when you tone it down but still try to keep it very friendly, i understand theres high end places with stuck up clients, but touristic industry is far more expensive and rewarding to servers.

I'm going to start serving for the first time and I've been kind of nervous to do so. But this video helped ease some anxiety and now I feel more confident in my serving skills. Like someone also said here in the comments "It's about confidence". Which isn't the only skills a server should have but it's an important one.

Now this guy is spot on. As a veteran busser, cook, server, and FOH manager he pointed out everything you need to do. "PEOPLE GO OUT TO EAT TO FEEL SPECIAL, AND AS A HOST OF (...) MY JOB IS TO MAKE SURE OUR GUESTS LEAVE READY TO TELL OTHERS OF THEIR AMAZING EXPERIENCE". As long as you are confident in or interview those are THE words to say. They can't teach you humility, they can't teach you respect. You must come into it with these attributes. I assure you if you head these words you will get the job. It's up to you to keep your job. Serving tables is like being back in middle school, dog-eat-dog world. Just show up to work 15 minutes early (on time) and your shift is golden.

The restaurant really makes the job. I went through several sucky places before I found a place that worked for my server style. I would never mess with "team serving" again also. It might seem like an efficient system but if you spend extra time helping other tables and the rest of the servers don't cover you............ well it's a nightmare.

I agree with everything here except stretching wine for 15 glasses. there is 5 glasses of wine in a bottle, I'll stretch it to six if needs be or seven if I get a particular read off a table. Also if I'm pouring for 5+ people then I will pour 5 glasses of wine and I'll get the bottle out of their way. Pouring little dregs out for everyone will make the host look cheap. That said, apart from that one point that was definitely one of the best, most focused tutorials on service I've seen on KZfaq.

He really means never make the first round of wine end before everyone is served. Ofcourse if the table has 20 persons you need a few bottles to start with.

- be there 15 min before shift - cloth black/ unauffällig (focus on face) no distraction - not too buddy buddy (never sit down and take order); - offer/ ask if they want drink before food - choose wine after food (match food) - check on them: food correct, fill up water, more drinks (so everyone can eat at the same time) - clear table (from right) für nächsten Gang ( serve from the left ) - wine: don’t empty bottle in first round (max 7; 1 bottle = 5 people) - eyecontact = know if they want something; don’t come back too often (=pushy) - when not too busy/ waiting make sure they can see you in case they need you - don’t turn away when they want your help - never ask if they want change: eg 100$ pill pay: pay:94,39 $, bring back exact change - tell goodbye when they leave

It's very good video. A lot of useful information here! The only thing is that if a party of 15 order just one bottle of wine :) :) :) you better ask first if all of them will be drinking wine and if they say yes, offer that you bring right away 2 or three bottles! I want to see a server that will make a bottle of wine for 15 guests :) that will be hilarious! But other than that, the video is very useful!

It's very true about not sitting down to take a customers order. My friend and I went to a restaurant and we were sitting on the patio, and the server came outside to take our order and she sat down and started complaining to us about one of her earlier tables about how lousy they tipped her and how picky they were lol. I thought it was funny but if she got the wrong customer, it wouldn't look good on her part

If you have one bottle of wine for 15 guests, make sure to first substitute the wine glasses for thimbles!

You don't only have to tell them your name. You could also tell them briefly about who you are really. A little bit about your life where you were born grew up and studied. Your likes dislikes and hobbies. And why you need that tip so bad. Make it snappy but if you happen to extend a little and there's an empty chair be sure to sit down so as for the customers not to strain their necks. if you have pics in your phone be sure to show them too. A picture paints a thousand words.

@@grandadan 5 stars? 5 stars only apply to hotels, restaurants in a hotel or restaurants in general can have only 3 stars max. and there are not many, 99% of restaurants don't even have 1 star. But you are right, the knowledge you need to wait tables in a at least 1 star restaurant differs very much from your avarage steak house.

I don't think this only applies to fine dining. I've worked in cafes and lower-class restaurants where the professionalism of the staff make the difference between a good and bad dining experience. Joking and sitting with customers is something I would never do when I'm on the clock.

This is true, but when your manager is an ass or when the customers are extremely rude or you're doing extra wk bc the ppl you wk with are lazy then its not such a fun job, but i guess like you said it depends on the restaurant

Interesting how after looking at what customers hate the most from a waiter, telling them our name is their least favorite. Yet many videos like this say it's a good thing to do. I say use your best judgement/ do whatever you feel comfortable with, since the topic seems to be such a divided one.

In high class places you never tell your name to anybody, you are there to serve them and they are there to be served and to pay for the big bill! I have never tell my name to anybody at the beginning, perhaps at the end if things get too friendly. Those too close approaches are to be used in low class places with low class salaries as well.

Brother, do not worry too much about my grammar, english is not my first language. I've got experience in many restaurants what helps confirm my opinion about this environment. Terrible places to work and yes only for people who doesnt likes challenges and they don't mind to be a servant. P.s. I'm not talking about them, who must unfortunatelly work there to survive

Nicola Amoré a lot of upscale restaurants only let their favorite employees (people that worked there for years and kiss ass and act happy go lucky when managers are present but bitch and complain about their job when no managers are around) work the best shifts and take home 900+ a week in tips. I know many waiters from upscale places I've worked that would make the same as like mcdonalds/grocery employees. Because upscale places tend to overstaff and only the longest employees get GREAT tips while everyone else gets paid like they make $15 or so an hour for like 6hours or less which is very mediocre sometimes horrible pay. I had to quit like 3 upscale jobs because bussers and runners and servers that didnt work there at least 4 years were making 500 a week on average and the ones that worked there longer were taking 900+ Only the bartenders werent overstaffed and always got great pay. I had to move to a family-ran restaurant that was in a really beautiful but poor/middle income area and that's where I made the good money because they were too cheap to overstaff us and made us agree to work overtime for no extra salary for a long while but we can still keep the tips I hate when I see on youtube and on reddit and news paper articles everyone talking about "work upscale youll make dough!!" No, work in a club, lounge, be a bartender or know how to bartend, be a cocktail server, or work in some unfair shitty upscale place for YEARS to get great shifts which equals great tips. Also many upscale places will not train you to be a bartender even though they let their favorite employees be trained years ago and occasionally let them make drinks for their and your tables.

That is very outdated. Except when serving wine for the tasting and rarely is everyone's food going to match the wine. Some people like to have a glass of wine before dinner so it is definitely okay to ask a guest if they want some wine. If they don't want any right now, they will tell you

you know, i appreciate all of the 'hints' etc.. that these guys offer, but, as a server for almost 30 years...in many types of restaurants, it is as simple as this, approach the table, let them know that you are incharge..respect goes a long way! do not let the customer order you around, the way to serve the guest, is to let them know you have it..you know what?! i cannot even begin to finish this without running out of space..all great servers do it their own way, not a manufactured way~

I actually speak English, Spanish, and a tiny bit of Norwegian. I was not trying to belittle your intelligence. Do you realize many people that are in this business are actually paying their way through school. The level of education is not related what so ever. I don't know where you worked, but I was a waiter for quite a while and my managers, co-workers, and even my customers were quite friendly. I was also paid quite well. I think you just had a shitty job.
