Ingredients:
For Kadai Masala:
25 g butter
5 medium onions, sliced
20g coriander seeds
2-inch cinnamon stick
1 teaspoon turmeric powder
1 teaspoon cumin seeds
1 teaspoon fennel seeds
1.5 tablespoon ginger-garlic paste
5 large tomatoes, finely chopped
10g cashew nuts
salt to taste
For the Gravy:
2 tablespoon olive oil
1/2 teaspoon salt
250 grams paneer, cubed
1 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 green bell pepper,diced
2 teaspoons sugar
1 tablespoon kasuri methi (dried fenugreek leaves)
100g whipping cream
Instructions:
Step 1: Prepare the Kadai Masala
1. Heat 25g butter in a pan over medium heat.
2. Add the finely chopped onions and sauté until they turn golden brown.This might take 15 minutes.
3. Add coriander seeds, cumin seeds, fennel seeds, cinnamon stick, ginger-garlic paste and sauté for another 2-3 minutes
4. Add the finely chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.
5. Add cashew nuts and fry for another minute. Set aside to cool.
6. Once cooled, grind into a fine paste by adding some water.
Step 2: Fry the Paneer and peppers
1. To the Paneer, add 1/2 tsp salt, 1 tsp turmeric, 1 tsp paprika and 1/2 tsp red chili powder. Mix well.
2.Heat 1 tablespoon of olive oil or ghee in a pan over medium heat.
3.Add the paneer cubes and lightly fry them until golden brown on all sides. Remove and set aside.
Step 4: Combine Everything
1. In a pan over medium heat, add the ground masala, fried paneer cubes and green peppers.Mix gently.
2. Add 2 tsp sugar and Kasuri methi to the pan and give it a good mix.
3. Pour 100g whipping cream. mix.
4.Cook for another 2-3 minutes until boil to let the flavors meld together.
Step 5: Garnish and Serve
1.Garnish with fresh coriander leaves.
2.Serve hot with naan, roti, or steamed cumin rice.
