Hello, 1. It's not a sushi knife (Yanagiba) but a Sujihiki (slicer). 2. The knife would greatly benefit from beeing thined down on both primary edges to regain it's original profile (power tool would really help there). 3. Sharpening technic kinda sketchy :) Else great restauration :)

Great job! But the knife is not sushi knife. This knife seems to be made not for Japanese because real Japanese sushi knives are one-sided edge and made of special steel. Hammertone is also a popular, and resent technique for souvenirs for overseas customers.

It's a wonderful restoration, but the sashimi knife is single-edged.

That rust was as fake as a 3 dollar bill. no where near the rust pits that would be on a blade that rusty.

The handle was much closer to the blade before restoring it. So it was more stable before.

I'm calling BS on this. Weird rust that does not pit. That style of knife is very modern. The old handle was very solid and the wood had the same rust?

As rusty as that knife was, there was no pitting in the blade. Like the rust hadn't been there very long. And a rusty pipe handle. Looks fake. Not a bad handle though.
