Revit does not have have an OTB tool to create ridges and valleys but this method will do the trick. You will need to duplicate the roof and cut it using the vertical opening in Revit. Watch to see how.

A better way is to create a ridge and valley profiles then using inplace modeling ...running it in respective places

You can change the materials of the roof. Select different roof sheets
