Hey guys welcome back to Pickles BBQ, we are doing cooks on the pellet cooker! . After a replacement board from Oklahoma Joes we are up and running and doing one of my favorite things, spare ribs! It’s surprisingly good.
You can make your own sauces and rubs and you should but both of these are really good.
I used Rics spg blend to keep it simple, definitely recommend checking out his channel!

Simple SPG
1 part kosher salt
1 part coarse pepper
1/2 part garlic powder
Amped up SPPOGC adjust at will
1 part kosher salt
1 part coarse pepper
1/2 part garlic powder
1/2 part onion powder
1/4 part smoked paprika
1/8 part cayenne

Looks good. Last Ribs i did were spare ribs. I use a basic rub and that's it. Thanks for sharing.

Those are some good looking ribs! I personally would rather buy St. Louis style so that I don’t have to deal with the “bits and bobs”. Sounds like you’re pretty happy with the pellet grill so far!

Anderson’s SmokeShow Hey thanks Andrew! You pay the extra expense of having the butcher trim em and lose all that good meat. I put quite a bit of it in the beans and collard greens. It’s definitely an interesting grill, temps are a bit weird but I work through it and the food comes out surprisingly good. Grill on brother!

Louis at R shack BBQ Haha I’ll tell you spares every day for me, they’re cheaper and it costs nothing to cut down to St. Louis style plus more meat. It’s definitely an interesting grill for a lot of these new to market, I would wait for version 2. Some good food coming off there though.

That looked fantastic. 6 hours,a-la the 3-2-1 method is too long to cook ribs. 3½ to 4½ hours is just about right. I like spares best too.

Big Lew BBQ Thanks Big Lew! It’s wild cooking on that thing, definitely an experience. I really don’t get the 321 myth, for me it’s far too much, if I want mush I’ll buy it in a can. You can’t go wrong with spares, more meat and cheaper. Oddly the pellet grill works well, who would’ve thought. No comparison but it’s not too bad.

Agreed, I do 4 hours max for ribs. I do wrap sometimes if I want saucy ribs. And 3-2-1 method I think is only useful if youre making something that's going to use rib meat so its easy to pull apart but I want to eat ribs on the bone and NOT falling apart lol

Dano's Pit Patio I’m with you on that Dano! I’m not sure where the whole 321 myth came about. I pull em when they’re done and never temped ribs. Sometimes I’ll wrap, sometimes not, depends on how I feel and who I’m cooking for. I like pulled pork but not that in ribs.

The board in the control Panel went out? How long have you had your Rider DLX And is there anything I can do to avoid that happening or was it a machine malfunction?

Matt Ramos Hey Matt! The board just failed after a few cooks. On the plus side, their customer service is really good and they sent a new one out free since it’s under warranty. Easy to replace, so not a big deal. I do like the way the grill is built but I think the electronics do need some work. Cheers brother!

Great looking ribs from that cooker. Nice, simple seasoning and turned out awesome. I tried 3-2-1 on a rack recently and it pretty much ruined them. Think I’ll try your method next time. Great job!

I'm with you, I always get the spare ribs instead of baby back. Also my pellet smoker doesn't seem to care about the heat either, that thing keeps temp just fine even when its in the one hundred teens outside. Your smoker turned out some great looking ribs, looks like you got the hang of that thing pretty quick. Have a good one Charlie!

Culinary Undertaking Its a well built cooker TJ, and honestly those ribs turned out great. Spares for the win since they are meatier and easy to trim with riblets. I’m still trying to figure out the temps on this but it turns out some good food. Keep on grillin brother!

DrTasteGoodBBQ Hey doc! It’s a 20 lb hopper, I was slightly surprised at how much it went through on a 4.5 hr cook at anywhere from more or less 250 to 300 inside the pit.

A Bite Of Life Thanks Ryan! Spares for sure are my favorite, they’re cheaper meatier and why have the butcher cut it up when you can do it yourself. It’s a cool grill, it runs really hot so far, but i like it. The ribs turned out great and surprisingly most food does on it. Take care brother and keep on cookin!

Just answered the other question, but I’ll add some more. You can go crazy and do hot and fast, crank up the heat and just let it rip. I like the more smoke it gets at lower temps, so it’s the smoke section of the control. Pellet grills don’t usually put out a ton of smoke flavor vs other methods, but even then I do it low and slow. Hope that helps brother! Grill on!

I aim for 225-275 which is the smoke setting for this grill, works like a peach every time!

Yikes my DXL will get them ribs to 150 in 45 min on the second shelf top left is my only good smoking spot. Too hot everywhere else.

That’s odd, have you tried the biscuit test? Sounds like yours might be running quite hot. I did have to replace the control board, thermometer and ignnitor at one point.
