Happy Homestead, a place where every day is happy.
We are James & Dee, a young married couple who run a smallholding on a small island of Eday, Orkney, UK. Eday is a beautiful island based off the North coast of Scotland, UK and is gnarled and battered by the strong waves and winds of the North Sea.
We are interested in permaculture, cold-climate gardening, we keep chickens, quail and ducks, enjoy fishing, hunting and making a lot of weird and interesting homebrew (James is the weird homemade wine guy!). I made this 3 years ago, no grapefruit but lemons. One gallon and it turned out dark and brandy-like. Very good

I finally have a proper fermentation bucket and I'm giving this a go today! Can't wait to give this a go. I have an excess of rice in the kitchen so this is perfect. Nice one dude!

My dude,i just got started fermenting...i have a 5lb batch of rice wine going using Chinese distillers yeast started 1-2-23 my first attempt. i started a 10 lb batch this past Sunday both of these i used sweet glut rice. i see your video and thinks to myself...."self i could do this just need another pickle jar OR use one of my 6.5 buckets". This will be a delicious wine i will use golden raisins they are my faves and i thank you for this SIMPLE recipe.Will return with results....BELIEVE IT!!!

Its hard to believe. First recipe I have seen where the rice was not steamed. Fermenting is a Many splendid thing. No limits to it!

I have just bottled this wine from this recipe and my lord, it's really good! Fermented to dryness in a week which totally surprised me and has been maturing for a few months. Gonna leave it to bottle age for a while but it is lovely already. Strongly considering making a 5-gallon batch. Can you keep it to ferment and age in the bucket without using demijohns? Like you, I've run out.

I don't particularly like dry wine, and am new to home brewing, so how much sugar would you recommend for a single demijohn, that is fairly sweet?

I'm CURRANT ly making a massive batch of this wine.. I used a turbo yeast, it went mental.. You do know you can use the mash for another brew... I also chucked in 1 kg of dark brown sugar.. Smells great.. I have subbed...

If I left the rice and raisins in the bucket how do you think the wine would turn out come bottling time? Just so you know I have an SS Brewtech mini-bucket that I use for home brewing (it has a conical bottom and a racking arm).

Here is what I listed as ingredients for 5 gallons: 2 kg - 4.4 # white rice and raisins each 2 grapefruit 1/4 to 1/3 cup? Ground ginger 5 kg -11# granulated sugar 2 teabags Pour boiling water over all. Top up with cold water leave headspace for fermenting. Add yeast nutrient and yeast when cool.enough. Stir every day for 1 week. Siphon to.secondary. top with water to 5 gallons. After 1 week or more put in bottles.

Also. I live in the tropics so its warm.i normally just set ingredients and leave for 21 days and it is ready after that. Do I have to stir everyday for al recipes or it doesnt matter if I stir

Can the raisins that are used be reused in a fruit cake? Can they actually be soaked in the wine to be used as fruit for a fruitcake? Is the fruit safe to eat for pickling?

What did you study James? Was that after your time in the Army? I did my studying whilst I served, great to get paid to study but not quite the classic student lifestyle as you can imagine! All the best from your near mainland neighbours.

I initially studied catering before I joined up - then once I was in, I studied Mental health nursing in the QA's. Pretty much a full time student crossed with a full time soldier. Good times. You'll have to pop over to Eday sometime, kettle is always on!

1 lbs. Raisins 1 lbs. White Rice (or rice of your choice) 1 gal. Water 2 lbs. White Sugar (or sugar of your choice) 1/2 oz to 1 oz. Lemon or Grapefruit juice (acid) 1 bag of Black Tea (tannin) 1/2 tsp. to 1 tsp. Ginger 1/4 tsp. Yeast of your choice, but preferably wine yeast 1/2 tsp. Pectic Enzyme (optional) helps clear up wine Note: Adding about 16 oz. of extra water can help with the rice and raisins soaking up your water. If possible use a mesh bag, muslin bag, or fermenting bag to contain your rice and raisins. It makes racking and filtering this wine a whole lot easier. I hope this helps anyone!😅😊

I was wondering if a significant amount of wine is lost in the swelled raisins. Would it not make sense to either cut them at the beginning or press them at the point of racking?

Cut or whole raisins are DRIED grapes so they will rehydrate either way

I've read that the yeast cannot access the sugars of the starch unless it is converted by an enzyme that doesn't appear to be in this recipe. If that's the case, what's the point of the rice?

Couldn,t find your 1 gallon recipe and didn't want to make a five gallon batch so for easy workings out gone for 21/2 gallons. Just halved everything. Been going now for 3 days and it's bubbling vigorously and making fab sounds, you can actually see the bubbles being made. Can,t wait for the end product, hopefully it will turn out as clear as yours. When putting into demijohns how long do you usually leave it ? and what's your final gravity reading to look for as you always say fement to dryness. Tia Diane

Sultanas and Raisins tend you give much of the same effect in the wine, depends on what you have most of
